Haupia (Coconut Custard)

So, my sister lived in Hawaii for 5 years and she came to visit a couple of weeks ago.  She knows my love for custards and pudding so she made me a custard called Haupia.  It is so freakishly simple, but lots of sugar and fat.  You make it with coconut milk, cornstarch, sugar and vanilla.  So.....I decided to see if I could make it WLS friendly and wow, was I impressed.

I have Bird's Custard Powder that I bought, so I just used it, but you can use cornstarch instead (becasue that's all it is).

In a medium saucpan heat 2 cups milk (reserve 1 tbsp) to almost boiling.
While this is heating, mix 2 tbsp Custard Powder or cornstarch with the tbsp milk in a bowl until cornstarch dissolves.
Mix 4 pkts of Stevia (powdered) into milk along with 2 tbsp coconut flavored Torani Sugar-Free Syrup.  (You could use coconut extract if you don't have the syrup, and maybe add another pkt of Stevia)  I tasted it after this to make sure the flavor and sweetness were to my liking.
Once milk is almost boiling, slowly whisk in cornstarch mixture and keep whisking, it will thicken a little.  You can add vanilla at this point, but honestly, I forgot to add it.  I love vanilla too...oops!

That's it!  I love it warm with some reduced-fat vanilla wafers crushed over the top.  It would also be awesome with some of my homemade granola that is packed with protein and no sugar.  I also just invested in a case of Kay's Natural's Protein Cereal which I love, so I could crush some of that on top and it would add protein.  Ahhh, the possibilities! 

When you refrigerate it, it will thicken a little more and be more of a pudding consistency.  If you want it thicker add more cornstarch, if you want it thinner like a sauce add more milk.

Now I am going to experiment with it to see if I can get some Any Whey protein powder in there and I'm also going to try some different flavors since I have about a billion extracts and 2 billion sugar-free syrups from Torani and Da Vinci.

I gotta admit....this sounds really good....and I've got a love for coconut everything!  Thanks for positing this!  I've got to experiment with a few things now!

I'm glad that I've impressed you T.  I ate the rest of mine yesterday with some crushed Kay's Naturals Honey Almond Protein Cereal and it was pretty darn good!  I think granola would be great too, so that will have to wait til my next batch.  You know, in Hawaii, they make it a lot thicker and then pour it onto a cookie sheet or jelly roll pan and make kind of bars out of it.  My sister and her family LOVE it!  Oohhh, I didn't think about a little toasted unsweetened coconut sprinkled on top.  I guess I'll be making another batch today. :)
