Hi I'm looking for a high protien low carb baked oatmeal recipe. If anyone can help.

Here's a link to one I made a few weeks ago.  It's very tasty.  IMO, it tastes better when it's refrigerated.

It has 6.2 grams of protein per serving.  If you added heat stable protein powder, it would be higher.  (Ex. Optimum Nutrition Any Whey unflavored is heat stable.)

Hi I've got one for you that is basically the same except I tweaked it some to add more protein.
          preheat oven - 375 degrees        spray 8x8 baking pan with cooking spray (like Pam)

dry ingredients:
3/4 C splenda
3C oatmeal (rolled oats not the quick cooking variety)
1 1/4 t baking powder
1-2 T cinnamon ( depending on likes/ dislike)
2 C powdered milk

wet ingredient:
3/4 C sugar free plain applesauce
1 C diet vanilla yogurt
1 t vanilla

1/2 pkg frozen sugar free cherries (or cranberries or combo of both)

bake 30 - 45 minutes
           check after 30 minutes break crust with fork if middle soupy put back in oven for an additional 5-15 minutes checking after 5 minutes.  The outside will become dry quickly so you want the middle more soupy than you would think.  I haven't tried freezing it but it is great cold right out of the fridge.

Here's the one that I just LOVE with greek yogurt on top.  I may have originally gotten it from BE, I'm not sure as it is not creditied in my file.

BAKED OATMEAL 'CUSTARD' WITH BLUEBERRIES

Vegetable Cooking Spray
1 cup + 2 tablespoons old-fashioned oats
1/4 cup Splenda granular
2 tablespoons sugar-free maple syrup
1 2/3 cup milk (or skim evaporated milk)
1 egg
1 teaspoon vanilla
Pinch of salt
1 cup fresh or frozen blueberries (or other berries)

Topping:
3 tablespoons Splenda granular
1/2 teaspoon cinnamon

Preheat oven to 350 degrees. Grease an 8x8 inch casserole with cooking spray and set aside.

In a medium bowl stir together the oats, Splenda, maple syrup, milk, egg, vanilla, salt, and berries. Pour into prepared baking dish. Bake for 25 minutes. Remove from oven and set dial to BROIL. Sprinkle the 3 tablespoons Splenda and the cinnamon over the baked oatmeal and return to the oven. Broil for 2-3 minutes or until bubbly and golden. Serve with yogurt or cream. Makes 6 servings.

Per Serving: 126 Cal; 6 g Protein; 3 g Tot Fat; 20 g Carb; 3 g Fiber; 6 g Sugar; 25 mg Sodium
