Why didn't I think to poach an egg like this?
I made this recipe (Tomato-Poached Eggs with Sardinian Music Bread) for supper and I marvelled at its simplicity and creativity. One problem many of us have is Italian food. We want to eat it but "Italian" usually means pasta and red sauce (spaghetti, lasagne, etc.) It's the pasta that is the devil in the details.
So I see this recipe which is, in a sentence, an egg poached in red sauce. Busy cooks could go for canned sauce I suppose and the carb-o-phobes could drop the bread (leaving you with basically tomato and eggs). I ate it as is using the Lavash substitution.
This leaves me wondering what else I can drop eggs into and create a meal.

Shirred eggs baked in individual dishes with cream, butter, and cheddar cheese. You could also add veggies, sausage, bacon

I am progressin diet tomorrow and planned this for breakfast. How ironic.

Ingredients:
- 4 teaspoons melted butter
- 8 eggs
- 8 tablespoons heavy cream ( ff milk will also work)
- salt and pepper
- 1/4 cup shredded Cheddar cheese
Preparation:
Put about 1 teaspoon melted butter into 4 individual baking dishes. Break 2 eggs into each dish. Add 2 tablespoons of cream to each dish and sprinkle with salt and pepper. Bake in a preheated 350° oven for 10 to 15 minutes, sprinkle 1 tablespoon of cheese over each egg just a minute or two before done.Shirred eggs serves 4.
