Making Chicken Pouch friendly
The whole family has been begging for BBQ chicken lately. I haven't cooked it because, well, chicken scares me. Meats in general scare me - still. So I gave in and baked some chicken breasts with BBQ sauce all over them. Family loved them - pouch not so much. Too dry. So I had a few left over (3). reheating leftovers sometimes don't go over well with Oscar the Pouch either and money is too tight to throw a bite of anything out.
So - Chicken Salad to the rescue. It was fairly simple and was delicious.
BBQ Chicken Salad
3 - chicken breasts (diced) - these were leftovers still covered in BBQ sauce
1/2 lg. red onion (diced)
2 stalks of celery (diced fine)
handful of grapes (quartered)
1/4 cup of SF Sweet relish
1 - 8oz container of Fage Yogurt
1/4 cup of mayonaisse
3 TBSP mustard
4 pkts of splenda
Combine the first 5 ingredients in a large bowl. In a seperate bowl, whisk the remaining ingredients together until well blended. Add the dressing mixture to the chicken bowl. Stir well. Keep refrigerated.

I buy a KC-masterpiece low cal BBQ sauce, they have it at the grocery stores here and at Target. It's only 10 calories and no sugar, and THANK GOD, because prior to surgery I ate bbq sauce NEARLY every day. I love it!
and this recipe sounds DEVINE!
I've made just regular chicken salad a couple times, but just wasn't impressed with it, THIS I think I can handle :)
