Vital Wheat Gluten or Wheat Protein Isolate 8000 question

Does anyone have some info on these products? I see it mentioned on my Diabetes forum and I found a recipe for a yeast dough using it along with flax meal, almond flour, wheat bran and soy grits..  I tried it out and it is kind of interesting. I used it for a pizza crust. I will try next with no topping to see how it bakes.

I just don't want to fall in love with something that I should not have. I think the word WHEAT is what worries me, but it is supposed to be just the protein from the wheat.

Any thoughts would be appreciated.

Vital wheat gluten is the gluten (protein) from the wheat kernel.  Since you need gluten to make bread rise, it was added to a protein deficient flour (like Almond Flour) for the purpose of getting the bread to rise.

I eat a lot of different things, but I can't say I've eaten that stuff at all.  the chinese use it for substitute duck or something....I did do a google on it...but so many different responses where diet and health are concerned that groups were very polarized about the benefits of eating those kinda things....  I would try it though just to see if i could make other things outta it....
