Chicken & Vegetable Lasagna
I have been wanting to make veggie lasagna so just kinda made this up as I went along. It turned out really really good!
1 pack zesty spaghetti season
1 can stewed tomatoes
1 can (16oz) tomato sauce (low salt)
1 cup diced squash
1 cup diced eggplant
1 cup diced onions
1 cup diced peppers
1 cup diced chicken
1 1/2 cup 2% low fat mozzarella cheese
whole wheat lasagna noodles (I think I used about 6 I did not use a big pan)
1 container ricotta cheese (skim milk kind)
In a skillet I combined the stewed tomatoes, tomato sauce and spaghetti season packet until mixed. Boiled my lasagna noodles and in another pot boiled my chicken strips (about 5-6 I think) . Diced up my veggies. When noodles were are done drain. I sprayed my dish with non stick spray and then spread a bit of the sauce mix. Then layered Noodles, ricotta cheese, chicken, squash, eggplant, onions, peppers, sauce, cheese, Did another layer and finished off with cheese. Bake on 350 for about 30-40 min until nice and bubbly.
