Mexican Tortilla Casserole
5 fat free or low cal flour tortillas
1 can black beans (drained & rinsed)
½ cup 2% sharp shredded cheese
1 can rotel tomatoes
1 can mexicorn
1 pack taco season
1 lb lean ground meat
1 onion
Brown ground meat and add your onion in. Drain and rinse meat. Add your drained & rinsed black beans, rotel tomatoes, mexicorn, and taco season to meat and mix. In a round casserole dish spray with no-stick spray and add a little meat mixture to bottom. Layer tortilla, meat mixture, cheese. I made three layers and topped off with a tortilla and a little of meat mixture and cheese. Bake at 350 for about 30-40 min until hot through and through and cheese is melted.
Im making this now!!!! I couldnt find fat free but i used low fat low cal wheat tortillas! There was more protein and less carbs so thats is good I'll let you know how it is! This is def. be one to turn into the support groups cookbook.
