Chicken & Sausage Gumbo

Chicken-Sausage Gumbo   ½ lb sausage cut into slices (I use turkey sausage) 1-3 tbs oil 5 tbs all purpose flour 1 cup chopped onion 1 cup chopped celery 2 large garlic cloves, pressed (I use the fresh chopped garlic in jar) 1 medium bell pepper, chopped 2 cups chicken broth (I use can low salt) 1 (28 oz) can diced tomatoes (low salt) 1-2 tsp Creole seasoning 4 cups chopped cooked chicken Hot cooked rice (I use brown rice or eat this like soup)   Cook sausage over high heat in large pot for about 5 min, stirring often. Remove sausage and drain them on paper towel. Add enough oil to drippings to equal 3 tbs, whisk in flour, and cook over med high heat whisking constantly for 5 min. Add onion and next 3 ingredients. Cook 5 min stirring often. Stir in broth, tomatoes, & Creole seasoning. Bring to boil, cover, reduce heat and simmer 5 min. Add sausage & chicken simmer covered 5 min. Serve over rice. Makes 4-6 servings.

I'm not a big fan of Creole seasoning but everything else sounds good.  Is there another spice or spices that you can think of that could be substituted?

You could prob just leave it out.  I love creole anything hot really.  lol lol  There is a really really good greek season I can not remember the name of it but it does say greek season on it you could substitut that.
