Diet Coke in baking

I found a recipe that said find a coke mix and add a whole diet coke (12 oz) and bake as stated on box.  I used a pillsbery yellow cake (160 cal's per serving for mix only) and tried this OMG it was fantastic!  It also suggested for white cake use diet 7-up and for choc cake use diet coke and strawberry cake use diet cherry 7-up.  I bought an angel food cake mix and tried with a Sprite zero and it worked good to.  the cake mix was 120 cals for mix only.  It acutally had an egg custard consistancy on the bottom.  VERY VERY good.  The I got really creative this weekend.  Needed something sweet to take to my MIL's for lunch yesterday.  Well got a just plain ole brownie mix (110 calories for mix only) added about 1/2 can of coke and OMG it was wonderful.  Set up fine and was mushy (not runny) in the middle.

yes mix and soda and nothing else.  cook as directed on the box.  When I did the angel food cake mix and sprite zero i did not give the soda enough time to settle down and started mixing and it got really hmmmmmm poofy.  lol lol  so i mixed as well as I could by hand and poured it in a 9X13 and it baked up great.  kinda reminded me of bread pudding.  it had that custard texture on the bottom and the cake on top.  Hard to explain but you have to try it.  The brownies did good to.  Only used 1/2 of the diet coke in those.  I mean you COULD NOT tell it was diet coke.  OMG they were so good.  ENJOY!

Thanks, I have used diet coke and diet cherry cole for chicken and pork recipes but never for any baking ones. Hmmmmm

I saw this recipe recommendation about 1 1/2 years here at OH. This past weekend I made a Red Velvet mix and a can of SF Chocolate Cola. It turned out great. 

You can also do the brownie mix with a pureed can of black beans, liquid and all. No oil, eggs, butter, etc. Turns out great, plus protein.

Yellow cake mix w/ diet coke tastes like really good graham crackers. With strawberry season coming up - we make this mixture and bake as cupcakes to use in strawberry shortcake. My sons each have their own favorites - oldest son likes lemon ro orange cake mix with diet sprite and the youngest likes devils food with diet cherry coke. My Mom likes spice cake mix with Diet Dr. Pepper.

The combinations are almost endless. The new cake mixes with splenda in them work wonderfully as well.

You know I was wondering when splenda would come in cake mix.  I have not seen it at my local walmart yet but I will be looking!  Totally makes since with the diet dr pepper (which I love) with the spice cake.  You are so right the combos are endless.  Thanks so much for letting me know what combos you use!

Are these cake mixes sugarfree?  I thought all boxed cake mixes had sugar in them.
