This might fit the bill. I just miss the "crunch" mainly and there doesn't sem to be much in the way of crunchy protien with low carbs and fat at the same time.

Aloha- The Eating Right Soy Crisps are my faves- I like the BBQ flavor but they also have sea salt and onion/sour cream. You can find similar brands at Trader Joes or Whole Foods.
You might also look for dried edamame- high protein, high fiber, low fat- a litle dry for me, I mix a few peanuts or sunflower seeds in but I'm having trouble getting my 800-1000 cals per day in right now so the fat from the seeds/nuts doesn't bother me.
