Almond flour or regular flour?
Hello my fellow looser's.
I have been trying to figure out a way to keep my eating habits as low carb as possible without much success. I admit it, I love cookies.
Have any of you tried using almond flour in your baking and general cooking as an alternative to regular white or whole wheat flour? Almond flour is very expensive and I am scared to buy it and mess up the recipe. So far, I have found a couple of chicken, cake & cookie recipes that I am dying to try. Please let me know what you use if you have found another alternative to flour. Thanks.
Oh, I marked this urgent because I might run out to the grocery store when I get some answers.

Almond flour is very grainy--not powdery like regular white or even whole wheat. I have used it as a crust for a cheesecake (mix with some melted butter and press into a spring form pan and bake for 10 minutes at 350 until lightly brown, then add cheesecake mix, sugar free and using non fat cream cheese of course) and to flour some chicken (1/2 soy flour and 1/2 almond flour and some Italian spice mix). If some one has other ideas I would like to hear some. I do not think you can use in cookies or as a sub for white flour in bread or cakes.
Hello, I only use flour for regular baking (meaning, what I bake and give away). I use almond flour and or flax meal all the time. For breading for eggplant or chicken, I mix 1/2 cup almond flour, 1/2 cup parm cheese, 1/2 cup flax seed meal, 1 tsp Italian seasoning and 1/2 tsp garlic powder. Keep in fridge to use whenever. I make muffins with flax meal.
I have made some cookies with almond flour. Not really like regular cookies, but sometimes you just have to get used to different things. There are a number of recipes for cookies with almond flour on this web site: http://kalynskitchen.blogspot.com/2005/04/low-sugar-desserts -and-fruit.html

I don't know where you live, so this may or may not be an alternative. I can usually find bulk, raw, almonds on sale at Sprouts. The price ranges from $4.99 to $6.99 per pound. I take them home and grind them up myself in my food processor. If I need it finer than my food processor, I stick about 1/2 a cup of it in my coffee grinder (I don't use it for coffee though) and grind it some more. Voila! Almond flour.
Hope this helps.
