Hi all,

Since cooking is such a challenge for me, I'd love some good crock pot recipies.  It makes cooking soooooo much simplier!  Thanks in advance!

I like to take round steak, cut in chuncks, flour it and then brown in a non stick skillet using just a little dab of lite margarine...When done, put in crock pot...Then I take about 4 packs of that beef gravy mix, mix with water and pour over the beef...Allow to cook for about 5 hours...Then I clean some potatoes, celery, carrots, onions and put in the crockpot...Stir, allow to cook then until the veggies are done...
* you can use gravy in a jar if you dont like using the dry mix packets*
**************************************************************************************************
Try putting chicken tenderloin strips in the crockpot...add some onions, sliced potatoes...Mix some lite milk in with 2 cans of cream of chicken soup to thin it, but not too thin...Pour it over the chicken / potatoes and coo****il tender, veggies are done...
***************************************************************************************************
Brown some lean hamburger, or can use ground turkey in skillet...When done drain if theres any fat...Add 2 cups of water, and a pack of taco seasoning mix, and stir...Coo****il the water is cooked away...Add one can of cream of mushroom soup...( dont dilute)...Stir, and then add some velvetta cheese.... ( use however much you like, I dont like mine real cheesy....Place in crock pot and put it on low until you are ready to use it...Can use tortilla chips for dipping...Low fat sour cream on the side ( opt)
****************************************************************************************************
Place some chicken in the crockpot...Mix just a little brown sugar/ splenda in with a big jar of salsa ( your choice)...pour over the chicken and allow to cook slow
*****************************************************************************************************
Hope these ideas helped...Tammy

Many people will walk in and out of your life, but only TRUE FRIENDS will leave footprints in your heart...And may that friendship have such a ONENESS that when one weeps the other will taste salt...Friends are like balloons ; once you let them go you can't get them back....So I'm going to tie you to my heart so I never lose you.

Here are a couple that we enjoy.

Whole Chicken into crockpot, sprinkle medium to heavy with Greek Seasonings. Add 2 cups of water and cook all day.
****************************************************
4 Chicken Breast or enough chicken tenders to cover bottom of crock pot.  Thinly slices onions and green peppers to cover. 1 can of refriend beans spread over top, then dump a jar of Salsa over and cook 3-4 hours.
****************************************************

Beef Stew Meat, 1-2 lbs
2 med onions sliced
4 large potatoes diced (about 1 in)
4 large carrots sliced thick

Veggies on bottom,  meat on top, salt and pepper to taste. Cover with Swanson's beef broth or water!  Cook all day.  When you get ready for dinner. Remove meat and veggies. Pour renderings into a large pot or skillet, bring to a boil. Mix 2 tablespoons of corn star*****up of cold water and pour into boiling juices, stirring constantly to make your gravy.  Simmer until thickened.  Add meat and veggies back into gravy serve over rice.

Chicken Burritos

3 - 4 B/S Chicken Breast
1 Can FF Refried Beans
2 cans Salsa Verde (the green kind)
sliced jalepeno peepers to taste, optional

Mix refried beans, peppers and salsa. Place 1/2 of mixture in bottome of crock pot. Place chicken on top of mixture. Cover chicken with remaining salsa mix.  Cook on low all day. Shredd chicken in beand mixture, stirring well. Serve in warm tortilla shells with shredded cheese, sour cream and onion, if desired.

We really enjoy this recipe. You can also wrap the mixture in lettuce leaves. My favorite way to eat it is straigh from the crock pot with a sprinkle of cheese, a little sour cream and some chopped onion on top. To me, it is even better the next day.

Cheesy Italian Chicken

1 pack of 1/3 less fat cream cheese, room temp
1 can 98% FF cream of chicken
package of dry Italian Dressing mix
3 - 4 B/S chicken breast

Mix cream cheese, cream of chicken soup and dry Italian dressing mix. Place 1/2 of mixture in the crock pot. Place chicekn on top of cheese mixture, cover with remaining mixture. Cover loosely with aluminum foil, cook on low all day.  Serve over whole wheat pasta or rice, if you can tolerate it.

* The mixture will be very thick, but thins as it cooks.

Meat Loaf

1 lb lean ground beef or ground turkey
1 pk your favorite meatloaf seasoning
loaf bread

Make meatloaf according to package directions. Place enough loaf bread in the crock pot to cover the bottom and a little around the sides (usually 4 slices for a regular size crock). Form meatloaf to the shape of the crock and place on top of loaf bread. Cook on low all day. About 30 minutes prior to serving, top with ketchup or tomato sauce or paste, what ever your taste. When done, remove meatloaf from crock, allowing te rest for about 10 - 15 minutes prior to serving.

* The loaf bread prevents the meatloaf from being greasy.
