Hearty Sausage Soup
1 lb turkey or chicken sausage
1 medium onion (diced) (OPTIONAL,)
1 garlic cloves (minced)
2 large carrots (diced)
2 tsp Italian seasionings
1 can chicken stock (14oz)
1 can Italian style diced tomatoes (14oz)
1 can white beans (undrained 14oz)  
Saute onions and garlic with sausage until browned. Add carrots, and seasonings and cook 3 minutes. Add remaining ingredients and bring to boil. Reduce heat and simmer 10 minutes. Season with salt and pepper. Serve with grated Romano cheese

Hi,

You mention potatoes in the cooking directions, but you don't mention them in the list of ingredients. Did you mean the beans (great substitute 'cause lots of protein, not a "white" carb)?

The original recipe calls for red potatoes, but for WL patients I left them out. I edited my recipe to show that....Thanks for the catch on that one!
