Low carb yoummy stuff
I just ate the best lunch. It was super simple to prepare.
Chicken I used 4 thigh pieces
5 cloves garlic smashed
1 can chicken broth (low sodium if you like)
Spinach 1/2 pound
thickener such as corn starch or a low carb brand (1 tsp)
carrots i used shredded, maybe 2 oz
grill chicken in a bit of broth with garlic cloves and carrots. When chicken done add rest of broth, bring to boil. Add spinach and cook. Meanwhile mix 1 tsp thickener w/ water add to mixture, bring to boil and then low.
Wahhhh la it is done. It is delicious. I pack 1 piece a day toped w/ the spinach and gravy. OMG simpky delicious and healthy to boot!

I guess it would be more like braising. I however, make my pan real hot and sear the chicken on both sides then add a bit of broth to continue the cooking. This way my meat stays juicy and i get the browned outside. Hope that clarifies. :)
