Flourless banana muffins

I got this off of a Crohn's Disease website... I have PCOS so I always look for low-carb things. They use nut flour instead of flour. They taste great! I am not sure about sugar content...  I have the band so I am not sure what works for RNYers... so obviously just make sure you look at the ingredients before you cook. :) :) 
  • 2 1/2 cups nut flour
  • 1/2 cup honey
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 4 eggs
  • 2 mashed bananas
  • 1/4 cup melted butter (if necessary)

    Just throw it all into a food processor, mixer, or blender, and combine. If the batter is really thick add the melted butter a little bit at a time until the batter is muffin consistency. I have never had to add it, but I live up here in the NW where the air is usually pretty moist.
    Line cupcake tins with paper cupcake liners. Spoon the batter into cupcake tins filling about 1/2 full (I use a 1/4 cup measuring cup so it goes faster).

    Bake at 375 degrees F (200 C) for about 15 minutes or until the muffins spring back when pressed.

What type of nut flour did you use?

I think it's Almond ... I bought it at Trader Joe's.

Soy flour is great as well. Very high protein / low carb. It's great for cakes, pies and cookies. You can find it at Walmart or any Oriental Food Store.  You can also use it to make your own Soy Milk. :)

I love that stuff!  Have you tried flax meal?  You can add a couple of tablespoons to a recipe to bump up fiber and protein

OMGoodness.  I just posted about almond flour...  How did the muffins taste?????  I really want to try baking with almond flour.
