skirt steak

hello all.
a local market had a really good sale on skirt steak, so I bought some.
the problem is I have no idea what to do with it now.  It's a cut/piece of meat that I have never used before.  Anyone have any suggestions?

hello,  grill it quickly don;t let it dry out.  The trick to it not being tough is always cut it against the grain.

the trick is to cook it quickly grilling is best or cook slowly.   The trick is when cutting the meat you must cut it against the grain.

I'm obsessive when it comes to fajitas - although my pouch does NOT like steak of any kind (yet I can eat hamburger, go figure) - I make mine with chicken. BUT my other half enjoys steak - so I make these for him and chicken for me.

I follow a recipe from Guy Fieri from Guy's Big Bite (I adore him.) Try it, it's really good...

Ingredients

Marinade:

  • 1/8 cup soy sauce
  • 1/4 cup Worcestershire sauce
  • 3 tablespoons liquid smoke
  • 2 lemons, juiced
  • 1 lime, juiced
  • 1 orange, juiced
  • 1 bay leaf
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper
  • 4 pounds skirt or flank steak
  • 1 bottle Italian dressing (recommended: Kraft)

Fajita Toppings:

  • Grilled onions
  • Grilled peppers
  • Flour or corn tortillas
  • Lettuce
  • Cheese
  • Salsa

Directions

In a large pot, combine ingredients for marinade, and simmer over medium heat until flavors meld. Let mixture cool, place meat in a shallow dish, pour marinade over meat, and let marinate in the refrigerator for 2 hours. Place meat in clean shallow dish and cover with Italian dressing. Marinate for 1 more hour in the refrigerator.

 

Preheat a grill to 425 degrees F.

Grill steak, along with onions and peppers, for 10 minutes on each side. Remove from heat and let rest for 5 minutes. Slice meat into strips, cutting across the grain. Top with your favorite toppings, and serve with flour or corn tortillas.

it's great when you mix strong spices with it....just slice it THIN....it's only gonna be tender and not so chewy when you do that....

there's so many great things you can do with it....  i like shauna's idea....
even for me, i could just grill it with some salt, cumin, olive oil, and lime juice... really simple... BUT whatcha gonna eat it with?  ah ha!  there's a problem....
