Lowish Carb Cold Weather Feel Good Pot O' Goodness
I know, it's a long name, but I couldn't think of a better way to describe it. This recipe is lowish carb because it does have pasta in it....Hold on, before you completely freak out on me and send me away, let me tell you...T has turned me on to low carb pasta, which has just 5g of carbs per 3/4 cup, and since I can only eat about 1/4-1/2 cup at a time, it really doesn't make a big difference in the grand scheme of things...now on to the recipe
1 box low carb pasta ( I use Dreamfield's Rotini from Netrition.com; they also make an elbow, spaghetti, and lasagna noodle, I would recommend all except the last one)
1 can cream of mushroom soup (low fat, low sodium, whatever you've got)
1 can cream of chicken (see above)
1 can Rotel (diced tomatoes and green chiles)
1 small can mushrooms
1 can green beans, cut however you like
2 large cans chicken, or the equivalent of fresh cooked chicken breast
1 can Italian diced tomatoes
1 tsp thyme
2 tsp italian seasoning
1 tb parsley
salt and pepper to taste
Side note: Since the pasta has lots of fiber in it, I would recommend cooking it for 10 good minutes so that it isn't chewy. And don't forget to salt your pasta water.
Edited: Sorry, totally spaced out on the directions...but don't worry, they are simple.
Boil water, add pasta, cook pasta, drain pasta, put pasta back in pot, add everything else (no draining) heat through, stir and enjoy

This beautiful little lady is exactly right! Eat this pasta and it won't put the pounds on you! It works onlyfrom digestable carbs and took me months to measure if they were correct in their assessment of 5 digestable carbs per serving.
I eat the dreamfields pasta 2 times per week and I have zero guilt..... I continue to lose and those of you who know me know that I don't need to lose more...lol...
