Need Rabbit recipe

Sorry if this offends anyone, But i need a good rabbit cooking recipe .On how to cook them and make them tender. Everytime i try to doit they end up tough.Any suggestions ? And is it good for us?

HI,
   WHEN I COOK RABBIT ,I USE THE ROASTING BAGS. I USUALLY COOK A COUPLE AT A TIME. I COOK THEM IN SOME SEASONING, ( ONION SOUP MIX,  OR CAJUN SEASONING, GARLIC AND BBQ SAUCE ) i COOK IT FOR 3 -4 HOURS ON 350. ADD WATER IN THE BAG. IT TURNS OUT GREAT !

Hey Pooh,  I have a recipe for Rabbit Fricassee that is great, if I can find it.  I think it is in a box somewhere from the last move.  I will try to find it but I have a Recipe disk that has the following on it.  I confess that I have not tried these, but they looked good!  The one for Squirrel sounds more like the one I used to make.  Haven't had any Squirrel or Rabbit to cook in a long time!

Squirrel Friccassee
 1 lg. squirrel, cut into serving size
   pieces
1/2 c. flour
1/2 tsp. salt
4 slices bacon, chopped fine
1 sm. onion, chopped fine
2 tsp. lemon juice
1 lg. apple, cored and diced
1 1/2 c. chicken stock

  Mix flour and salt.  coat meat.  In large, heavy skillet, cook bacon.  Remove and reserve bacon.  Brown meat in bacon grease.  Sprinkle with onion and lemon juice.  Return bacon to skillet.  Add apple and stock.  Cover and simmer about 2 hours.

Rabbit Friccassee


2 1/2 lb. rabbit (chicken can be
   substituted)
Garlic powder
Salt
Pepper
Flour
1 can cream of mushroom soup
1 can mushrooms
1/2 c. milk
1/4 c. red wine

 Season rabbit with salt, pepper and garlic.  Coat with flour and brown in small amount of vegetable oil for about ten minutes in a Dutch oven.  Add can of soup, mushrooms and milk.  Stir in wine.  Cover and cook in oven at 350 degrees for one hour.

Haven't had squirrel or rabbit since my grandpa died. Gosh I bet it has been 30 years.
