Pizza Soup

making this in my crock pot right now, I will have to let you know how it turns out...

2 cans of low sodium chicken broth
1 can of french onion soup
1 medium onion chopped
2 yellow summer squash- sliced
2 zuchinni -sliced
2 green peppers diced
chopped celery to taste- {I put in almost a whole bunch}
1/2 polksa keilbas- flavor your choice- sliced
simmer on low overnight
In the morning add..
1 can or bottle of marinara sauce your choice
diced pepperoni to taste
canadian bacon to tase
simmer til heated thouroughly
serve with shredded cheese of your choice
you can top with olives
fresh tomatoes or any pizza toppings you love.

I will let you know how it tastes....

Well It turned out well!!
It made a lot of soup.  Its just me and hubby and you would have thought I made enough for a family of 8!!! Hubby talked me into adding some frozen cheese ravioli before I added the marinara sauce.  I just ate around those.  He said the pepperoni made it too spicy but I thought it was perfect. I did add a little minced garlic and some greek seasoning to taste. It  DID NOT need salt. with all the cured meats it was salty enough.  Of course I spooned out as much solid food  for my serving with just a little broth.   But later in the day  when I would normally drink hot tea, I had a small mug of broth from the soup and it was delicious.  I froze most of it, as neither one of us are big on left overs right away.  I did add a Little extra marinara sauce as it it didn't have enough tomato flavor but in the future I will add some canned tomatoes.  No canadian bacon though as it got really chewy and not too palatable.  Maybe next time I will try some ground pork, or some meatballs instead of the pepperoni and canadian bacon.  The cheese was a nice flavor addition, but even alone it was good. Hubby longed for some bread sticks.  Anyway it fulfilled my pizza craving and it wasn't hard to make.

good afternoon
could you just clarify for me on how much polska keilbas you used.  was it 1/2 cup or pound or some other measurement?  thanks. and how about bacon bits in place of the bacon or is that a no no?

I purchased a whole polska keilbasa.  I cut up half of it and saved the rest for another meal.

OMG!!!!!!!!!!!!!! This stuff is amazing. I made it yesterday and it made a crock pot full. It was absolutely wonderful. I browned some bulk spicy italian sausage meat and put that in there as well. It gave it some kick that was a lot like a good chili but a very, very flavorful bowl when it was all finished.

My teenage sons loved it. My boyfriend loved it - his roommate loved it. This recipe is a keeper.

I am glad you liked it.  It freezes well according to my husband. He has been taking it to work this week for lunches.  I love to cook, and for so many years had to stop.  I couldn't stand upright long enough in the kitchen to do so.  It is amazing to me that 2 months after the surgery I can stand again. What a difference this surgery has made to my life.... Thank you Dr. Mkinley!! and thank you Dad for helping me pay for it!!
