Granola??

I love granola.  It is one of the things that I miss the most at this phase (puree) of my recovery.  Here's a link to my recipe for chocolate granola.  The inspiration was Bear Naked's chocolate granola.  They do have a good line of lower sugar items, but they're a bit pricey so I figured out my own.

We eat a lot of FlaxZSnax Wild Cherry Nut Granola that I buy at netrition.com.  I had surgery 5 months ago and started looking around for breakfast cereals.  When I ordered this my DH loved it so now I order 10 packets at a time--he is diabetic and needs to watch his carbs too.  Over Christmas the kids came home (3 in college now) and everydone liked it.

When I make granola I use peanut butter instead of oil and sf maple syrup instead of sugar. If you have a recipe you like just sub ingredients that you know are wls friendly.

I love my granola and you can change it up wherever you want by adding dried fruit, nuts, whatever.  I don't measure anything, just put however much you want of each.

Rolled oats
Ray almods, coarsely chopped in mini food processor
Ground flax meal
Protein powder (I use Any Whey unflavored)

Mix all together and moisten with sugar free Torani or Da Vinci syrup (I use white chocolate).  Don't put too much, just make sure it's all moistened.  Spread out on a baking sheet sprayed with cooking spray and bake for 20 minutes @ 350* stirring it around every 5 minutes or so.  Once it's all browned I leave it out on the counter until it completely cools so that it will dry and become crunchy.  Bag it up and put on yogurt, with fresh fruit.  I like to soak my fruit in sugar free almond syrup and just leave it in the fridge.  It tastes amazing!  That, with Greek yogurt (I make my own) and some granola.  Awesome!

Here is my fav granola recipe. I got it from Bariactriceating.com. Love putting this on yogurt and it is super easy to make.

SF Oatmeal Almond Granola   
1/4 cup serving size 
Calories: 36 
Fat: 3 
Carbs: 2 
Protein:1 
Makes 4 cups   
1 lg egg 
4 TBS Butter Melted 
1 tsp Vanilla extract 
1/2 tsp ground cinnamon 
1/2 cup Splenda 
1 1/4 cup Rolled Oats, not instant or quick cooking 
3/4 cup slice Almonds 
Vegetable oil cooking spray   

Preheat oven to 350 and line a baking sheet with parchment paper or use a silicon non stick liner. This is important because without a liner it will stick to the pan.
  Whisk together the egg, butter, vanilla, cinnamon and Splenda until smooth. Add oatmeal and Almonds, mix well to coat. Press mixture into a thin solid layer on the parchment paper. Bake for 12 to 14 min or until golden; cool and than break into pieces. 
Also important..store in an airtight container or it will get soggy.
  I had to bake this a bit longer and did not use it up fast enough so it got soggy. I popped it on a silicon pad and nuked it for a few seconds and that crisped it back up..could be put back in the oven also. This is seriously good and easy to eat just as is.

Hi Patti,

I have not tried it, but I would think you could add anything you want. Dried cranberries sound wonderful in it to me! Give it a try and see how it comes out.

If you add dried fruit to granola it's generally best to do right when you pull it out of the oven.  When it's still warm it will kind of release the flavors into the cereal, but if you cook the fruit it gets too hard.

Good luck in your granola ventures.  Thanks for asking for the recipes.  They all look good.

This just sounds way too good and the nutrtion is good.  I can't wait to make up a batch and try it ,  thanks so much.  I have a feeling that you will be my wife's favorite person when I make this.
