It's funny I saw this post. I had JUST searched for a bread pudding recipe last night. Co-workers asked me to make a dessert for a lunch tomorrow since I could make something weightloss edible for me and they suggested a bread pudding.........so I searched and I am going to make this one tonight.







Soft and Sweet Bread Pudding
Serves: 10
Preparation Time: 15 Minutes
Cooking Time: 45 Minutes
Total Time: 1 Hour
 
Ingredients
2 large eggs
2 1/4 cups 1% low-fat milk
1 1/2 cups SPLENDA® No Calorie Sweetener, Granulated
1 1/2 teaspoons ground cinnamon
 
1 teaspoon vanilla extract
5 cups 1/2 to 1-inch cubes day old French bread
1/2 cup raisins
 
  Directions
1 Preheat oven to 350 degrees F.
2 Whisk together eggs, milk, SPLENDA® Granulated Sweetener, cinnamon and vanilla in a large bowl. Gently stir in bread cubes and raisins. Pour mixture into a 1 1/2-quart ungreased baking dish.
3 Bake 40 minutes or until a knife inserted in center comes out clean. Let stand 10 minutes before serving.

I also love Tapioca Pudding.  They have a no sugar one by Kozy Shack and it has 11g of carbs with 4g of fiber for a total of 7 usuable carbs.  Might want to give it a try.

Here is my mom's recipe for Tapioca pudding.

Tapioca Pudding

1/3 cup splenda
3 tbsp tapioca
2 3/4 cups of milk ( I use skim)
1 egg beaten
1 tsp vanilla

mix splenda, tapioca, milk and egg in a medium saucepan. Cook medium heat stirring constantly until mixture comes to a full boil. Pudding thickens as it cools. remove from heat. Stir in vanilla. Cool for about 20 mins. I like to eat mine hot.  The original recipe calls for sugar but I have always used splenda. I also made it with a scoop of vanilla protein powder in it. It turned out really good. it makes about 6- 1/2 cup servings
