Fresh Spinach Recipes

First off, its a pleasure to find that a male is a sucker for bargains too! lol! Anywho - I had a recipe at a restaurant recently and paid $12 for this dish! wow! I told my husband that I could do this dish at home AND much cheaper! lol! (of which I did and was a HUGE hit!) And since I had most of the ingredients on hand, made it for ALL of us for around $12! :) Score! :)
Roma Tomato Basil or Spinach Chicken
boneless skinless chicken breast
fresh basil (subsituted with fresh SPINACH instead)
roma tomatoes
mozzarella cheese
seasoning blend of choice (both the restaurant and I simply used salt/pepper)
cooked pasta of choice (I used steamed fresh broccoli since pasta is NOT a friend of mine anymore - lol!)
**Note: Amounts are not given because specifics are not needed. Use any amount appropriate for your family! Feel free to tweek and prepare according to your tastes!
Spray chicken breasts with non stick spray & season with salt/pepper - set aside.
Preheat non stick skillet - spray with Pam or other non-stick spray and add chicken breasts.
Coo****il juices run clear. (If you don't have a non-stick skillet - I have used a cast iron skillet with successful results also.). When chicken is done, layer remaining ingredients & allow cheese to melt. Serve over something (pasta / vegetable or alone...which is great also). You could even serve it over more spinach - depending on much you need to use up! lol! Enjoy!
Zesty Spinach Salad
1/3 cup Olive oil
3 tablespoons cider vinegar
1/2 teaspoon onion salt
1/2 teaspoon Spenda
1/2 teaspoon dry mustard
1/8 teaspoon paprika
dash cayenne pepper
1 (10-ounce) bag fresh spinach -- torn
6 to 8 radishes -- sliced
2 hard-cooked eggs -- sliced
1 small onion -- thinly sliced
2 bacon strips -- cooked and crumbled
In a small bowl or jar with a tight-fitting lid, combine the first seven ingredients; mix well. Chill. Just before serving, lightly toss spinach, radishes, eggs, onion and bacon in a large salad bowl. Mix the dressing again; pour over salad and toss.

I helped make these in my cooking class. They were very easy to make. When we made these we used ground turkey. We also used fresh spinach about 1 cup. When we cooked these patties we cooked them in a bit of oil to keep the patties from sticking. At the cooking class and at home these were cooked in a electric skillet. Please make sure to keep the lid on the skillet while cooking to keep the patties moist. When I made them at home I used thawed frozen ground turkey. I fryed my patties in Pam.
Ingredients
- 1 lb 93% lean ground beef or ground turkey (7% fat or 93% lean)
- 2 bunches spinach, bunches washed and cut into pieces (may substititute a 1-pound bag of frozen chopped spinach, thawed and well drained)
- 1/2 finely chopped onion
- 2 minced garlic cloves
- 1/2 teaspoon salt
- black pepper
- 3 cups cooked brown rice

Preheat frying pan (no oil). -

Combine all ingredients except brown rice in a large mixing bowl. Mix well. -

Form mixture into 12 small balls. Place in frying pan and flatten into patties using a spatula. -

Cook over medium heat until cooked on both sides. -

Serve over cooked brown rice.
