Fresh Spinach Recipes

Ok, I'm a sucker for bargains, I admit. A local store is advertising fresh spinach for $1.00 a bag. I usually like to poach some fish or chicken with fresh spinach. Besides doing it this way and eating it in a salad, any other ideas for using it fresh? Would it be worthwhile to blanch and freeze some? I think frozen spinach is cheap enough anyway.

slice some garlic, warm it in olive oil, throw in the spinach, cover until it wilts and toss around the oil and garlic. . . heaven on a plate :)

Ohhh that does sound good! and I bet a sprinkle of parmasaen cheese would be good on it too.

Hi, Pasta is not my friend!  When I make Spagetti for my DH I just put spinach on a plate and cover it with Spagetti sauce.  I really like it and don't miss the pasta.

Greek Chicken is fabulous. I never measure ingredients - so you'll have to based on what you think you'll need (and taste of coarse.)

Ingredients
Boneless, skinless chicken (diced)
Can of diced tomatoes (I use the ones with the herbs already in them)
Garlic (minced)
Olive Oil
Spinach
Feta Cheese (I use Tomato and Basil)
Lemon juice
Black olives (optional)

Brown the chicken with oil and garlic, add can of tomatoes (drained), cheese, spinach, black olives and lemon juice - let simmer for about 10-15 minutes. I usually serve it over angel hair - but it's good without pasta or with spaghetti squash.

i love creamed spinach. I cook the spinach in the microwave, squeeze out the excess water, then in a pot on low on the stove mix it with some fat free 1/2&1/2 and season with salt pepper and a little nutmeg. an acceptable substitute for the higher fat version

That's all there is to it? I never made it before and did'nt think it was this easy. I'll throw in some cheese and its dinner. Thanks Paul!

my pleasure Rich. i had some of it last night with some shrimp scampi I made. Like you I LOVE a bargain. Stew Leonards in Norwalk had bay scallops on sale for 3.99 so I stocked up on 5 pounds. froze em, and have been having fun trying new stuff with them. they also had wild american shimp for 5.99 which were amazing!

Great post....as a pre beginner cook....I learned a lot....thanks....keeping it simple for girls like me helps a lot.....
