Beef jerky recipe

Hey kids, I am in need of a good beef jerky recipe for a home dehydrator (ingredients for the marinade). I recently bought a dehydrator and have dried fruits, veggies and herbs all of which came out fantastic. I especially liked the apples and pineapple. Yesterday I marinated some London Broil (I do believe that is flank steak) and then dehydrated it in my unit. I am really not fond of the flavor of the jerky as it is more of a BBQ than a "hot 'n spicy" flavor. And it was really salty when finished. My husband likes it. It did turn out real good other than what my taste buds usually like.

Can you help me here??

Thanks!

From Alton Brown (Good Eats)

Beef Jerky

  • 1 1/2 to 2 pounds flank steak
  • 2/3 cup Worcestershire sauce
  • 2/3 cup soy sauce
  • 1 tablespoon honey
  • 2 teaspoons freshly ground black pepper
  • 2 teaspoons onion powder
  • 1 teaspoon liquid smoke
  • 1 teaspoon red pepper flakes
Sounds good.  Good luck!

Wow, sounds good. That is just what I was looking for were the quantities of the marinade ingredients. Thanks

Love Alton's program also.

There are actually Beef Jerky spice kits near the spice isle and around where dehydrators are sold. They are really good too and you can choose the type you want, like hot and spicy and so on.
I love my dehydrator! I love to get grape tomatoes, slice in half and sprinkle with salt and dry those....I also do a lot of my tomatoes from my garden in the summer....They are delicious and are a great snack item. Mushrooms do wonderful as do hot pepper's. I dehydrate the peppers and then grind them down to a powder to add to things. My kids say I either freeze or dehydrate everything!
Good luck and let us know how it turns out no matter what recipe you use!

Sherry, thanks for the info on the spice kits. I bought mine on line at Wal-Mart. I will look next time I go to Wally World or Target to see if they have any kits. I did not even think to look for them there. I am going to guess that the kitchen gadget stores in the outlet malls possibly have them also.

I have done carrots, (turned out great) herbs, celery leaves, celery (did not care much for the celery), grapes, pitted cherries, oranges. I look forward to the summer when I have herbs and other veggies growing in the garden.

How do you dry oranges? and how do they come out?
When I see mushrooms reduced, I buy and dry those. They are great added to a pot of soup, or in my pre-op days to a pot of rice. Now instead of rice I add them to a pot of Quinoa.

I only did oranges one time because we received a fruit basket for Christmas. What I did was slice them in half and in about 1/4 to 3/8 slices and then dried them. Well, them came out pretty good. I do not have anything to compare to. I like the intense (my opinion) flavor. I have some at my desk at work. They are a little "leathery". They would be good back packing or a bike ride. The book said they could be used for snacks, crafts and recipes.

Hope that helped.

Hi Christine,

Do you have Menards near you? I was there yesterday and they sale jerky kits in various flavors, they were on clearance for 4.00 a box! My sister makes jerky for the family for the holidays! I loved it this year! Good luck! Hugz Dawn

Thanks for the info and sorry for the delay in responding. Yes we have Menards here in IL. I will try and remember to look for the kit next time I go there.

I found a recipe for Ground Turkey Jerky. I have it marinating in the fridge now and will be putting it in my dehydrator tomorrow. I will post the recipe if it comes out OK.  Terry
