Ground Buffalo

My favorite is chili.  I usually like beans in my chili, but when I use buffalo I just go with meat, tomato and spices.

I've also used in with shredded cabbage-the goal is sort of to make the inside of an eggroll-mmmm, that sounds tasty right now.

Thanks everyone! I tried buffalo meatballs today. They are pretty good if I say so myself! Im trying to learn to cook healthy food...totally new experience!

If you ever get a chance to go to Ted's Montana Grill (I think that's the name of it)  you will get plenty of ideas on how to fix buffalo.  Although the food is pricey there it is delicious.  When we were there I had the pot roast.  Yummy!  Hubby had a buffalo burger.  But there was meatloaf, steak and I can't think of the rest.

Anyway, I'm sure you can use your ground buffalo the same way you use regular ground beef.  I bet it's real good in chilli and meatloaf (maybe use an extra egg, it'll add moisture).

If anyone is interested you can also get buffalo burgers already made up at Trader Joes.  You get 6 (I believe) individually wrapped, for $8.00.  You do need to season them and don't overcook because they will turn out dry.

Buffalo is almost ready!! I found buffalo online and will be cooking short ribs in a crock pot tomorrow! Just let us know when your coming and I will leave the light on and a plate on the table!
