Ground Buffalo

Any ideas on what to do with ground buffalo???

All I can think of is buffalo burgers. I had them many years ago you make them just like regular ground beef burgers.

I usually just make a patty and BBQ like above or even just cook in a pan on the stove with some seasonings. I have used is browned in spagetti sauce.  I think you could substitue in any recipe that had ground beef or ground turkey.  It is super lean, I like it, but then at my house I never know what I will get as my hubby is a hunter/fisherman (he is out hopefully catching our supper today, yummy fresh fish!), and brings home lots of different things.  The flavor is tame, not gamey like many other things I hunter can bring home.

I must admit, i love buffalo, but I like it in a steak form....when it's round you can make meatloaf or burgers....other than that, it's pretty dry so it's hard to incorporate like regular hambuger meat....

too bad i can't even get buffalo...

darn it...

Hi Cowboy! I just love your recipes. I order my buffalo now online from the Buffalo Guys. It comes right to my door! I just order some steaks and such this morning.

It's pretty good in chili.  I need the moisture from tomatoes to get it past my stoma.

Add a can of S&W Caribbean black beans and an egg.
Mix well.  I put a big dollup into silicone cupcake holders and bake 40 minutes at 350.  Moist as you please.

If you can't find the beans use plain black beans and add cumin and minced onion.  A totaly difference lavor but very nice.

Experiment with stroganoff or goulash spices or your favorite blend of cajun spices.  I do this with ground turkey.

I use it the same way I use a gound sirloin.  In tacos, meatloaf, etc.
