I like to saute in olive oil some onions,garlic,bell peppers and whatever other veggies I have on hand. Then I add some broth or water and add my lentils and simmer until done. Sort of like a thick soup or stew.I try to have lentils once a week, they have the most protein of all the beans and they sit well with me.

Lentil soup...
INGREDIENTS

1 onion, chopped
1/4 cup olive oil
2 carrots, diced
2 stalks celery, chopped
2 cloves garlic, minced
1 teaspoon dried oregano
1 bay leaf
1 teaspoon dried basil
1 (14.5 ounce) can crushed tomatoes- I ALSO USE STEWED
2 cups dry lentils
8 cups water - I USE BEEF BROTH EITHER ALL OR 1/2
1/2 cup spinach, rinsed and thinly sliced - FROZEN
2 tablespoons vinegar
salt to taste
ground black pepper to taste
Add to Recipe Box


DIRECTIONS
In a large soup pot, heat oil over medium heat. Add onions, carrots, and celery; cook and stir until onion is tender. Stir in garlic, bay leaf, oregano, and basil; cook for 2 minutes.
Stir in lentils, and add water and tomatoes. Bring to a boil. Reduce heat, and simmer for at least 1 hour. When ready to serve stir in spinach, and coo****il it wilts. Stir in vinegar, and season to taste with salt and pepper, and more vinegar if desired.

I just made this recipe yesterday.  It is tasty!  My husband loved it too.  You make it in a slow cooker. 

1 bag (1 lb) dried brown lentils, sorted and rinsed

2 medium carrots, chopped (about 1 cup)

1 large onion, chopped (about 1 cup)

3 cloves garlic, finely chopped ( I used the prechopped in a jar)

64 oz chicken broth (8cups)

1 can (6oz) tomato paste

1/2 cup dry sherry or chicken broth

1 1/2 tsp ground cumin

1 tsp dried thyme leaves

1) Spray 5-6 quart slow cooker with cooking spray.  In cooker, mix ingredients

2) Cover; cook on Low heat setting 8 to 10 hours.  Stir well before serving. 

Per serving (1/2 cup each)
Cal: 91 cal  Protein:  7g

Ok....I don't cook....and I have no recipes to share....but I do have a bit of history on the lentil.....if you place them on your dining room table on New Years Eve....you will invite the Goddess of prosperity into your home. Lentils looked like ancient roman money......

My Italian family puts a plate of lentils on the table with a ton of different kinds of fish for good luck for the coming year.....

This is good.  It reminds me of hummus.  It's good with raw veggies.

Spicy Lentil Dip

  • 3 cups cooked lentils
  • 1/2 cup coarsely chopped red onion
  • 4 cloves garlic, coarsely chopped
  • 1 serrano pepper, coarsely chopped
  • 2 tablespoons white wine vinegar
  • 2 tablespoons olive oil
  • 1/4 teaspoon cumin
  • Salt and freshly ground pepper
  • 1/4 cup coarsely chopped cilantro

Place lentils, onion, garlic, pepper and vinegar in the bowl of a food processor. Process until smooth. Slowly add the olive oil. Season with cumin, salt and pepper and pulse 3 times. Remove to a bowl and garnish with cilantro.

Hi- I love lentils and use them a lot.  I put about a cup of sorted and washed lentils (brown or french) into my crock pot with diced carrot, celery and onion, put in a bay leaf and italian seasoning.  Cover with beef broth by an inch or two and let cook on high for 3-4 hours or low for 5-6. When the lentils and veggies are tender, I add diced low fat turkey kiebasi and cook a little longer to heat through.  Simple but delicious and full of low fat protein.-donna

I'm gonna make this today in my mini crockpot. Its a nice small recipe and I have all the ingredients.
