I usually just mix mine with some onions, mushrooms and a package of Lipton Extra Beefy Onion Soup mix. But I know that Eggface (www.theworldaccordingtoeggface.com) has quite a few recipes. I tried her caprese turkey meatloaf and it was incredible. Check her out - she's amazing.

I use Alton Brown's recipe from Good Eats and it is a big hit at my house.  I think he uses different meat, but I have used turkey.  I don't have the recipe handy, but if you go on foodtv.com and do a search you can find it.  Good luck!

This one is from Eggface. I used garlic-herb feta cheese and oatmeal instead of breadcrumbs. No milk.

Shelly's Florentine Turkey Mini Meatloaf

1 Yellow Onion, diced
3 Green Onions, diced
3 cloves Garlic, diced
1 - 16 oz. package frozen Chopped Spinach, cooked and drained thoroughly
1 1/4 pounds Ground Turkey, the average weight of 1 package
1/4 cup Italian Style Dry Bread Crumbs
1/4 cup Milk
1 Egg, beaten
1 teaspoon Oregano
1/2 cup Tomato Basil Feta Cheese, crumbled
1/2 teaspoon Kosher Salt
a few twists of Black Pepper
Butter/Oil for sauteing

Cook and drain spinach thoroughly. Squeezing out any excess water with a clean kitchen towel. Set aside. Saute onions till golden, Add garlic and drained spinach cook 1 minute. Mix to combine. Set aside to cool.

Soak breadcrumbs in milk for 1 minute. Beat egg. Add egg, cheese and soaked breadcrumbs to ground turkey. Add cooled veggies and seasonings. Mix till combined.

Divide into 8 equal mounds. Form into mini meatloaves . Bake for 45 minutes in a 350 oven. These freeze well either cooked or uncooked.

I have a great recipe!  It is Paula Deen's, but don't worry it doesn't include a stick of butter!

 

1lb of ground ...

1/2 c onion

1/2 c of green pepper

1 egg

8 oz. diced tomatoes with juice

1 1/4 t salt

1/4 t pepper

1/2 c quick oats

(I add a couple of shakes of worstisire (sp))

Topping

2 T brown sugar

1/3 c ketchup

1 T yellow mustard

Bake at 375 for one hour

I made the Eggface Bacon Cheese Burger meatloaf last night -- Fabulous!  She has some great recipes.

Hi Scott,

Thanks for turning me on to Heart ad Sole!  They really put me in a great pair of running shoes.

My latest meatloaf is so easy.

1 lb turkey
1 can S&W Caribbean Black Beans
1 egg

Blend beans in a Magic Bullet.

Add beans to meat ad mix well.

Add egg to mixture and mix well.

Place into a loaf pan and bake at 350 for 50 - 60 minutes.

You can add 1/2 can of drained tomatoes and some minced onion too, if you like, then bake.
