LOW Carb: Adobo Chicken

Some folks think that roasting peppers is hard, but its so simple and easy to do, takes only a minute or two of prep time and you come out with a wonderful tasting meal.  Steps one and two are super simple....Just read them!  After that, the rest is child's play.  Enjoy!

Adobo Chicken

Ingredients:

2 ancho chiles
2 pasilla chiles

zest of one orange

juice of 1 orange

1/4 cup vinegar

1 TBSP sesame seeds

1 garlic head

1 cinnamon stick

1 TBSP pink peppercorn

1 tsp whole allspice

1 tsp dried oregano

3 cloves garlic

4 chicken quarters

1/4 cup sliced almonds


Preparation:

  1. Slit the chillies and scrape out the seeds. Peel garlic and roast with the chillies, sesame seeds, cinnamon stick, peppercorn, allspice, dry oregano and cloves until the aromas filled your kitchen (and house!)
  2. Put spices in a blender or food processor and process to a fine powder.
  3. Add orange zest, orange juice and vinegar and blend until a smooth paste forms.
  4. Use the paste to marinate chicken for at least 2 hours before baking.
  5. Pre-heat ovent to 350°F.
  6. Put chicken on baking dish. Sprinkle almonds over the chicken and bake for 35-40 minutes
this makes 4 servings with only 3 net carbs per serving.

Sounds wonderful.  Stupid question time - so how DO you roast the chiles - prep, oven temp & time?  I'd love to be able to roast my own chilis.  THANK YOU!!

To roast chilis cut them in half, trim the tops, scoop out seeds and ribs.  Throw them into a baking pan (a heavy one if you have it).  Drazzle with olive oil, season with salt and pepper and bake at 450* for about 20 minutes.  If you are doing tomatoes and onions and other veggies, then increase your time.  A big pan will take about 45 minutes.  And don't forget to wash your hands--the oil from the peppers can really hurt  if you get it in your eyes.
