I've just discovered the minute muffins in a cup. Here's the recipe I'm using:
1/4 c. oatmeal (blended into flour)
1/2 tsp. baking powder
1 tsp Splenda
1 tsp Sugar
1 egg
It works out to about 5.5 g protein and 90 calories but I'd love to push the protein a little more. Has anyone done this? What were your results?
I use Unjury unflavored, any ideas on how I could change the recipe to incorporate more protein?
Lastly, what kinds of fun add-ins are you using?
Do tell!

I have made them added protein powder, and it works just fine.
I make these, but use ground flax seed, and NO SUGAR. Here's the recipe:
1/4 cup flax meal (grind ½ c seeds in bullet)
1/2 tsp. baking powder
1 or 2 packets of splenda (and/or a shot of SF cinnamon syrup)
1 teas cinnamon
1 large egg
Mix in the Bullet for about 5 seconds (make sure well blended)
Microwave for 1 minute! (in the same cup)
If you want you can add 2 T of cream cheese to the mixture (it manages to
stay in the muffin and ooze out when you eat it....AND it will UP the protein a bit, but also the calories.)
Here is a recipe that tastes like a brownie:

According to CalorieCounter.com this variation has 12.4 g protein, but the calories are closer to 200.

Here is a recipe that tastes like a brownie:
Chocolate/Walnut:
About 1/4 cup flax seed meal,
1 egg
1/2 tsp. baking powder
rounded tablespoon of plain greek yogurt
heaping tablespoon of cocoa powder
2 teaspoons Splenda,
a handful of chopped walnuts,
and a shake of mini-chocolate chips (sugar free if you have them.
I nuked for 75 seconds and let it stand for a minute.
Another variation would be banana (use 1/2 a mashed banana instead of the yogurt) and some banana protein powder.
