BEST SF fudge recipe yet (yes it sets!)
This is the EASIEST and BEST TASTING fudge recipe I have found yet. (And YES it sets!)
1 (8 oz) bag SF chocolate chips
1 box of SF chocolate (or fudge) frosting mix
1) Mix sugar free frosting mix as directed. I used this one...
It is available at most Kroger stores in the diabetic/diet/SF food section. (It is easy to mix, just add 3/4 cup water and beat it until it has a frosting consistency, etc.)
2) Melt entire bag of SF chocolate chips on stove top in skillet coated with non-stick cooking spray. I used these...
3) Empty all melted chocolate chips into empty mixing bowl. Add 80% of the frost mix only. (When mixed, the entire frosting mixture weighs in at 351 grams. We are only using 210 grams of that. So if you have a kitchen scale, this will be easy. If not... 210 grams ends up being 1 cup + 9 tbsp + 1.5 tsp + an extra 1/3 tsp of the frosting mixture. See why we should all own a kitchen scale that measures in ounces and grams?)
4) Beat this mixture for a few minutes until it looks uniform. (The icing and melted chocolate will be slightly different colors. I beat the mixture until the entire bowl looked the same color throughout and I was "beating up" any streaks of either color.)
5) Empty fudge mixture into a large plate/bowl/pan that is coated with non-stick cooking spray. (I used butter flavored non-stick cooking spray for this and coating the pan I melted the SF chocolate chips in. But any non-stick cooking spray would work.)
6) Cover with foil and wrap. Allow to refrigerate overnight before cutting into squares.
NOTE:
This is BY FAR the BEST TASTING fudge I have made. It is SPOT ON taste wise. However, it has no real nutritional value. It's just a treat.
