LOW Carb: Bourbon-Maple Scallops

Bourbon-Maple Scallops

Ingredients:

1 pound of fresh sea scallops
1/8 cup Bourbon
1/8 cup high quality maple syrup
1 small shallot (minced)
¼ tsp cayenne pepper
2 Tbs olive oil
salt
pepper


Preparation:

Lightly score the tops and bottoms of the scallops with a crosshatch pattern (a slanted tic-tac-toe board). Only let the knife go through the surface slightly.  Drain any additional juices from the scallops

Whisk the liquids and seasonings together. Add the scallops and let them marinate in the liquid for 15-30 minutes. Sauté on a medium-high flame for 3-5 minutes per side. Try to only turn over once. Make sure the Scallops have a tiny bit of carmelization from the syrup.

Drizzle the pan juices over the top and serve.

 

This serves 4 people with about 10 carbs per serving  (it’s not really that much because you’re not drinking the sauce and it doesn’t have that much sauce on it after you plate it.  Tons of great protein. Maple is naturally occuring (like honey), so i's very easy for us to digest without fear of dumping (for most of us, I can't speak for all of us...hehe).  Either way, this is awesome, so try it and stop cooking "normal stuff" that is boring your taste buds and getting you in a rut!  HA!
