Blueberry Protein Muffins/Cookies

Happy Holidays!!!  Here is a recipe I tried today.  (I made the protein muffins using blueberry protein powder instead of vanilla protein powder.  They were DELICIOUS!!!)

Blueberry Protein Muffins/Cookies

 

4 egg whites

1 cup blueberries

1 tsp vanilla

½ cup oats

1 tbsp cornstarch

½ cup Splenda

2 scoops vanilla protein powder (or flavor of your choice)

 

Combine all ingredients until blended well.

Mix in blueberries and drop by the spoonful onto a greased cookie sheet (or into muffin holders).

Bake at 375 degrees for thirteen minutes.

Makes 12 cookies (or 12 cupcakes).

Each cupcake has approximately:
59.36 calories
.23 g fat (only 3.49 % calories from fat)
10.59 g carbs (The blueberries or whatever fruit you use will cause the carbs to be high on this, etc.  I could have lowered the carb count by using a zero carb protein powder... I just didn't have one on hand.  The nutrition facts below are based on 7 packets of the Biggest Loser Blue Blueberry Protein Powder to-go because that's what I had on hand.)
5.28 g protein

These are not big bulky muffins either.  They are small sized (though not mini-muffins) that are FULL of flavor.  OMG are they full of flavor!  

DEFINATELY easy and DEFINATELY worth a try!

Don't you just LOVE blueberries???

I'm thinking about tweeking it for apples or apple cinnamon or banana or even SF chocolate chip or something.  (I'll post the alterations if they're any good.)
