Peanut Butter and Zucchini Bread?

Does anyone have a recipe for sugar-free and healthier zucchini and/or peanut butter bread?  I have a zucchini recipe I am going to try and alter, but thought maybe someone had one up their sleeve.

Mix oil and sugar. Add eggs, one at a time beating well after each addition; blend in vanilla. In a separate bowl, sift together the flour, baking powder, cinnamon, salt, nutmeg, and baking soda. Add sifted dry ingredients to first mixture; alternating with grated zucchini. Fold in chopped nuts and chocolate chips. (Batter will be a bit thin.)
Pour into greased and floured 13x9x2-inch pan. Bake at 350° for 55 minutes.

ucchini Bread Low Fat Low Sugar

2 c splenda
1 cup cinnamon applesauce
2 c shredded zucchini (raw and unpeeled)
1 tsp vanilla
1 c chopped walnuts
3 eggs
3 c flour
1/2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp cloves

Beat Sugar, eggs, applesauce, zucchini, nuts and vanilla until blended.
Sift together all other ingredients and slowly add to wet mixture.  Add a little water if batter is too dry.
Pour into 2 greased loaf pans
Bake at 350 for 25 minutes.  Do NOT overcook.  Ready when toothpick comes out clean.

ignore the stuff in blue--it was a second recipe but wasn't WLS friendly and somehow I did not delete enough of it.

Is  25 minutes enough time for this bread to cook?

I check it with a toothpick--in my oven it is ok at 25 minutes in a medium loaf pan.  :  )  HelgA
