LOW Carb: Hanky-Panky Hamburger Casserole

Ok...this is so easy to make that any of your kids can make it.  Cooking doesn't have to be a labor of love...

this dish is built for cool-weather heartiness that is super healthy and tastes great with classic combinations we all love.   Ths dish serves...ummm  a lot of people  I never really counted, but for the sake of arguing... 6-8 people easily.  I can only guess at the carb content since no portion control was used...but it's going to be extremely low at around 5-7 grams per serving.

I was in the mood for something different yet I had a friend who wanted stew, but she didn't want it done in the crock pot...so I suggested "hobo pie" and she didn't like the sound of it..so I told her it was called "hanky panky casserole" and that it would get her husband excited.  So there's where the name came from.  If your family doesn't get excited about eating cheesy-hamburger-goodness that looks like art when youtake it from the oven, then something's not right...hehe..

Hanky Panky Hamburger Casserole

Ingredients:

1 lb. hamburger, lightly browned
5 or 6 slices bacon (cooked)

1 sliced shallot (1 sm.)
1 layer sliced carrots
1 layer chopped celery
1 layer black beans (or pintos) out of a can (but drained and washed well)

1 layer fresh green beans….(must not be canned)

1 quart of chopped or diced tomatoes (with juice)

1 minced garlic clove

1 layer of green peas  (you can sub blackeyed peas if you can’t handle the green peas)

¼ tsp onion powder

¼ tsp coriander

¼ tsp nutmeg

½  tsp black pepper

Salt to taste

 
Topping:

Generous portion of sharp cheddar

 

 

Preparation:

 

Layer on the bottom of large casserole dish in this order:

Black beans (or pintos), celery, green peas, carrots, fresh green beans, shallot. 

Mix spices together, put spices over the top of the veggie layers.

Add bacon.

Add ground beef layer.

Add tomatoes with juices over the top of the ground hamburger layer.

Bake 1 hour at 350 degrees. Please preheat oven.

Add cheddar cheese over the top to form final layer, continue to bake for 6 minutes, then broil until golden top forms. (watch it don't burn it)

I've never thought of green peas when I think of any type of hamburger casserole but I'm game, the rest of it sounds delicious!
