SF Egg Nog Recipe

Can someone please give me the recipe for the SF Egg Nog Recipe.  We had a holiday party, I did sip a little bit of Regular Egg Nog and almost lost my mind it was sooooooooo good.  I did not go overboard, just a few sips and that was it, so now I want to make some but the right way...SF...So please, please ,please, give me that recipe.

Here's a recipe I found

INGREDIENTS
  • 1 (1 ounce) package sugar-free instant vanilla pudding mix
  • 7 cups fat-free milk, divided
  • 1 teaspoon vanilla or rum extract
  • 2 packets sugar substitute
  • 1 cup fat-free evaporated milk
DIRECTIONS
  1. Combine pudding mix, 2 cups of milk, vanilla and sugar substitute in a bowl; mix according to pudding directions. Pour into a half-gallon container with a tight-fitting lid. Add 3 cups of milk; shake well. Add evaporated milk and shake. Add remaining milk; shake well. Chill.

FOOTNOTE

  • Nutritional Analysis: One serving equals 107 calories, 1 g fat (0 saturated fat), 1 mg cholesterol, 187 mg sodium, 15 g carbohydrate, 0 fiber, 10 g protein. Diabetic Exchanges: 1 fat-free milk, 1/4 starch.

Here's another one (it's from a Splenda cookbook and you can find it on their website)...I made it a couple days ago and I thought it was delicious!

rep Time: 20 minutes
Cook Time: 5-8 minutes
Makes: 15 servings

Ingredients

1 cup (250 ml) SPLENDA® No Calorie Sweetener, Granulated

1 tbsp (15 mL) arrowroot or cornstarch

1 tsp (5 mL) ground nutmeg

7 egg yolks

4 cups (950 mL) milk

2 cups (475 mL) fat-free half-and-half

2 tbsp (30 mL) vanilla extract


Note – if you wish to use rum, use 1 cup (235 mL) dark rum in place of the 2 tablespoons of vanilla extract

Directions

Mix together first 3 ingredients in a large heavy saucepan. Set aside.

Whisk egg yolks; add to SPLENDA® Granulated mixture whisking until blended. Gradually whisk in milk.

Cook over low heat, whisking constantly until the temperature reaches 175°, approximately (5 to 8 minutes). Remove from heat and whisk in half and half; cool.

Cover and chill 3 hours or up to 3 days. Stir in rum or vanilla just before serving.

It makes about 2 quarts and, having 1/3 cup sugar, means Sugar adds only 32 calories per 1/2 cup serving.  In most egg nog recipes, its not the calories from sugar that get you, its the calories from fat.

You could replace the 1/3 cup sugar in Alton's recipe with Splenda, et al.  Keep the 1 Tbsp in the merinque, however.

Davincis makes some great sf syrups and eggnog is one flavor here is a shake I make!!!
Holiday Eggnog shake

6-7 ice cubes
1 scoop white chocolate protein PVL brand (probably any vanilla will work you like but the white choc is so smooth and I favor pVL whey gourmet!)
7-8 squirts davincis eggnog sf syrup
3 dashs nutmeg
1 tsp sf/ff white choc pudding powder
water to fill Magic Bullet mug
whiz around! YUMMY!

Amazingly like the real deal, but sugar free and not an egg in sight! (If you'd like to add richness, a quarter cup of egg substitute would be wonderful.) - Linda

1 cup fat-free half & half
One 1-ounce package sugar-free Jell-O instant vanilla pudding powder
5 cups 2% milk
½ cup Splenda granular
3/4 teaspoon freshly grated nutmeg
1/4 teaspoon cinnamon
2 teaspoons brandy or rum extract
1 teaspoon vanilla extract

Whisk together the half & half and pudding powder until smooth - this will be very thick. Slowly whisk in mil****il smooth. Whisk in Splenda, nutmeg, cinnamon, and extracts. Allow to chill for at least 2 hours. Serve with whipped cream and a sprinkling of freshly grated nutmeg. Makes 12 servings.

Per Serving: 82 Cal; 4 g Protein; 4 g Tot Fat; 7 g Carb; 0 g Fiber; 5 g Sugar; 155 mg Sodium

I use Hungry Girl's recipe and it's delish!

5 c. Light Vanilla Soy Milk

1 sm pkg SF, FF Vanilla pudding mix

6 packets of Splenda

1 tsp Rum extract

1/2 tsp Nutmeg

Mix well in blender and let refrigerate for a few hours to thicken a bit.

For an 8 oz serving:  80 cals,   1.72g fat,  11.5g carb,  5g prot,   6g sugar
