Need ideas for Christmas Party

Hi all! I am hosting a Christmas party for our WLS support group and needed some ideas for a chicken dish. It would need to be something that would be moist and that could be cooked or at least kept in a crock pot for service. Thanks in advance for any suggestions!

Crock pot Chicken Stroganoff 6 frozen skinless chicken thighs
8 oz sliced mushrooms
8 oz sour cream
1 can cream of mushroom soup
1 package Lipton onion soup mix
½ c white wine
Place Chicken in the bottom of the crockpot; top with the mushrooms. In a mixing bowl combine sour cream, soup, soup mix, and wine until well blended. Pour over the chicken and mushrooms. Cook on low heat for 6-8

Oooh, that sounds good. I was thinking about maybe doing a crock pot chicken cacciatore but didn't know how well that would go over. So this would be a good choice too. Thanks!

Buffalo Chicken Bites and Blue Cheese Dipping Sauce

Buffalo Chicken Bites

Ingredients

3 (6-ounce) boneless, skinless chicken breasts, cut into 24 (1") cubes

3 celery stalks, cut into 24 (1") pieces

3 tablespoons butter

2 tablespoons hot-pepper sauce, or more to taste

1 teaspoon canola oil

1/4 teaspoon salt

1/8 teaspoon freshly ground black pepper

Instructions

Cut chicken breasts and celery into 24 (1") pieces.

Melt butter in a medium nonstick saucepan. Whisk in pepper sauce and cook for 1–2 minutes, or until slightly thickened; set aside.

Heat oil in a large nonstick skillet over medium-high heat. Season chicken with salt and pepper, add to pan, and cook, turning occasionally, until browned on all sides, about 6 minutes. Add butter mixture to pan and gently toss chicken until well coated, 1–2 minutes.

Remove chicken from pan and skewer each cube with a toothpick. Skewer 1 piece of celery at the base of each. Arrange on a platter and serve with dip.

Blue Cheese Dipping Sauce (Phase 1)

Makes 1/2 cup

Ingredients

2 tbs. crumbled blue cheese

1/4 cup reduced-fat sour cream

2 tbs. mayonnaise

1 tsp. fresh lemon juice

1 tsp. red wine vinegar

Hot pepper sauce

Instructions

Mash blue cheese in a medium bowl, leaving some small lumps. Whisk in the sour cream, mayonnaise, lemon juice, vinegar,and pepper sauce to taste. Transfer to a small bwol and serve with the chicken.

White Chicken Chili Recipe

1 tablespoon olive oil

3/4 lb boneless skinless chicken breast, cubed

1 large onion, minced

6 cloves garlic, minced

1 cup dry white wine or chicken broth

2 cans great northern beans, rinsed and drained

2 teaspoon mustard powder

2 teaspoon ground cumin

1 teaspoon salt

1/2 teaspoon ground black pepper

1/2 cup shredded reduced-fat sharp cheddar cheese

Heat oil in large skillet over medium-high heat.

Add chicken and coo****il no longer pink.

Remove chicken and set aside.

Add onion and garlic to skillet and coo****il tender.

Place chicken, onion, and garlic in crockpot.

Add wine, beans, mustard powder, cumin, salt and pepper.

Cook on low 5 to 6 hours.

Sprinkle with cheese and add sour cream.

Everybody I know loves this recipe and I always make it for parties.

Chicken Enchilada Dip

2-3 Chicken Breasts (3 regular or 2 large), boiled and shredded.  I put taco seasoning into the water that the chicken boils in.
1 block of softened cream cheese
1/2 cup mayo
2 cups shredded cheese
1 can green chilies
1-2 fresh jalapenos seeded and diced.  They have to be fre**** makes all the difference.

Mix everything together and put into a baking dish ( i use my deep dish pie plate) and bake at 350 for 45 minutes. 

Serve with tortilla chips or celery.

Oh and the best (or worst) part is I never have leftovers I have to take home!
