Mexican Chicken Soup -- crockpot recipe

Hi Guys!
I've been playing in the kitchen again, and hit the jackpot. So, I wanted to share the recipe with you all.
My inspiration.. I had chicken tortilla soup the other day at Red Robin. It was delicious & when I got home & entered it at the dailyplate.com, I found out that it only had 136 calories. (What??? All that taste & so few calories?? Wahoooo!!!) So, I looked around on-line to see if I could make something so tasty at home. I tweaked the recipe with what I had at home & man was it tasty!! I didn't add any toppers (tortilla chips, sour cream or cheese) because it was so tasty alone.
I thawed 3 boneless chicken breasts last night in the fridge, so it's be ready to go this morning.
In a large crock pot add
3 boneless chicken breasts
1 box of chicken stock (it's 4 cups)
1 large can of tomato sauce (29oz) (The recipes called for a can of tomatoes, but I don't like the chunks)
1 small can of diced green chilies
1/2 a can of cream of chicken soup (I had it leftover in the fridge)
1 palm full of taco seasoning (Rachel Ray style)
1 palm full of dried minced onion
A few shakes of Garlic Powder
I cooked that on high for about 2 hours. I took out the chicken breasts & let them cool off enough to touch them. I then diced up the breast into bite sized pieces. Then, add the chicken back into the crock pot.
2 cans of pinto beans, chili flavored (juice & beans)
2 cans of corn, drained
Add the remaining ingredients & stir. I covered the pot back up & reduced the setting to low & cooked the rest of the afternoon. It had such nice flavor without being spicy & it was very filling.
It made 10 cups of soup & here are the stats: A serving is 1 cup
Total Calories: 170 Fat: 1g Carbs: 26g Protein: 14g Fiber: 7g

Revision band to DS. I had plastics to take care of my jiggily bits. I'm feeling so good!! My results have been even better than I ever dreamed.

You could absoutely add a can of cheese soup to the mix. I read several recipes for Chicken Tortilla soup & I used those basic ideas as inspiration for my soup. I've never had chipotle peppers, so I'm not sure how that would taste, but if you like them, it'll probably turn out great!
Let me know when you try it, ok? And do let me know any tweaks you try. I say that, because I posted my enchilada recipe a while back & someone mentioned the way that they changed it up.. and her idea sounded delicious. I'm still planning to try it her way the next time I make it.
