SOMETIMES YOU FEEL LIKE A NUT!
In my other life, I was a big coconut fan. I found a great sugar free coconut macaroon recipe and modified it.
4 cups Unsweetend Coconut
6 egg whites or 3/4 cup Egg white EGGBEATERS
1 1/4 tsp Vanilla or Coconut Extract
1 1/4 cup Splenda
Preheat oven to 350.
Mix all the ingredients together. Set aside for 30 minutes. The longer the coconut sits, the better to work with it.
I use a silicone mat to line my 9x13 cookie sheet. If you don't have on, parchment paper will do.
I take coconut mixture and pat it in the pan. I make it fit so there is about 1 inch of space all around the pan. I then cut the coconut into squares. Separating the rows a little bit.
Bake for about 15 minutes. They will get golden on the bottom. If you like a toasted look, leave in for 17 minutes.
********NOW IT'S TIME TO GET CREATIVE******
Melt some dark chocolate in the microwave. Stir well.
Dip 1/2 the coconut square in the chocolate. set aside on parchment paper. Then add your own decoration. I top with either a toasted almond, or more toasted unsweetened coconut.
***you can also add pecans to the coconut mixture
***you can use splenda brown sugar to alter the flavor. (remember you would cut the brown sugar down to 3/4 cup)
