Tilapia - help?

I bought some, but I dont know what to do with it.

My favorite is plain pan grilled. A couple of sprays of PAM in a non-stick skillet and let it get hot over a med. heat. I season the fillets with a squeeze of lemon, onion and garlic powder and dried dill. Place in skillet, sear on one side a few minutes then flip. Coo****il meat is opaque white. DH likes salsa with it but I make a little tarter sauce with a Tbl of FF mayo, 1/2 teas pickle relish and squeeze of lemon.

thanks for the tip.

I ended up, using egg beaters for an egg wash, then a little bit of breadcrumbs and lipton garlic and herb seasoning, and breaded it in that and then baked it.

 

It was DELICIOUS.

 

btw, I've NEVER eaten tilapia and haven't eaten fish in 25 years. I found a new fave protein :D

This is good to try with any white fish, or I imagine any fish in general.

Chop up one onion, potato, mushrooms and any other veggies you like.  Let them all marinate in a mixture of balsamic vinegar and olive oil or apple cider vinegar and olive oil, salt and pepper.  Make more than you need cuz you'll use it for the fish too.

Preheat oven to 375*.  Take a large piece of parchment paper and lay out a portion of the veggie mixture in the bottom.  Place a piece of the fish on top and drizzle some of the oil mixture on top.  Season with more salt and pepper.  Wrap up the "package" and staple (tape won't work) to seal the pouch.  Bake for about 20-30 minutes, until fish is flaky and potatoes are done.

This has a lot of flavor and the veggies make you feel like you're doing good, which in my opion you are!  I've tried with Orange Roughy and I think I like it better because it's a meatier fish.

Sometime try Panko breading. It is found in the ethinic food aisle and is vey light. Less carbs and yummy!

I like to take a high fiber cereal put it in the food process and grind it into a bread crumb like consistency.

coat the fish in mustard, then wipe off the extra mustard, you just want enough for the crumb mixture to stick to.

Once it is coated, put it into a frying pan that has just enough olive or canola oil in it to make sure the fish doesn't stick to the pan.  Very very little oil.  You can also use pam or something similar instead of the oil.

I have also done this with chicken breast strips as well.
You can use different types of mustard as well.  I have done it with simple yellow and hearty stone ground types.  It is very tasty.

I do this with dover sole, but any fish will do...

Spread 1/4 tsp mayo on the fish, add 1Tbl pesto and bake on 400 for 4-6 minutes or until flakey.
Take it out and top with another Tbl of pesto.

Or use any flavor salsa in place of the pesto.  Trader Joes has a sun dried tomato pesto that works well too.
