What should I bring?

I need to make a good soup for a lunch at my church this weekend.  Everyone is bringing a different soup.  Some that are already signed up for are, chicken noodle, broccoli, potato, minestrone, chicken chili, vegetable, and regular chili.  I would like to bring something that is meat free (I'm vegetarian but not so strict that I would not use chicken broth).  Do you all have any good recipes that would go over well at this lunch?  I'm up for anything.  Thanks!

This has become the favorite for my family, and is well received at potlucks.

TACO SOUP  
  1 lb     lean ground beef  (I use vegetarian "Meal Starters" from Morningstar Farms or add an extra can of beans)            
1 pkt   taco seasoning mix              
1 can  diced tomatoes
1 can  tomatoes w/chilies
1 can  creamed corn   
1 can  regular corn     
1 can  black or kidney beans
1 can  chili beans in sauce   In a very large pan, brown the ground beef and add taco seasoning (don’t add water). Drain and rinse the black (or kidney) beans before adding, but add liquid from all of the other items.   Heat through and serve. This works very well as a crock pot dish. Just brown the beef, then throw all other ingredients in and leave it cooking while you run off to other things.    I know the creamed corn sounds a little yucky, but trust me, it just thickens the soup and makes it hearty—your kids will never know it’s in there!    It's a lot of cans, so don’t forget to recycle!

It's yummy with Fritos, but can I really say that on this board? =)
We sometimes top it w/2% cheese (shredded) or FF sour cream.

how about this--it is a really good soup

CURRIED LENTILS

2 tablespoon olive oil
2 cups onion, chopped
1 cup carrots, chopped
1 cup celery, chopped
1/2 cup yellow bell pepper, chopped
2 large garlic cloves, minced
2 tablespoons curry powder
1/8 teaspoon cayenne
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried cilanto
1 tablespoon finely minced fresh ginger root
2 cups lentils
8-9 cups vegetable or chicken stock
One 15-oz can lite coconut milk

In a large stockpot heat olive oil over medium heat. Add onions, carrots, celery, yellow pepper, and garlic. Cook for 10 minutes or until softened. Add curry powder, cayenne, cumin, salt, black pepper, cilantro, dried lentils, and ginger root. Cook for 2 minutes or until spices are very fragrant. Stir in 8 cups of the broth and coconut milk. Bring to a boil and reduce heat to low. Simmer for 30 minutes or until lentils are tender. If it gets too thick before they are done, add more broth. Makes 10 servings.

Sara,
A friend of mine made this soup the other day for our lunch and I came home and made it for my family for diner, it is so good and very easy.  You also could leave the chicken out if you wanted to.

Chicken Tortilla Soup:

1 can of Enchilada sauce
1 small can of green chilies
1 onion, chopped
1 large can of Petite diced tomatoes
2 boxes of chicken broth
1 can of corn
chili powder, to your liking
cumin, to your liking
chicken, I use chicken fajita seasoned thighs.
Sour cream
Avocado, diced
Shredded cheddar cheese
tortilla chips, crushed

Brown chicken and onions.  Add all the rest of the ingredients and cook for an hour or so. You could put this in the crock pot and let it cook all day long, it just gets better. 

I serve this with crushed tortilla chips, sour cream, cheese and avocado in each bowl.  This is awesome

All of these sound great!   I ended up making a vegetarian taco soup and it turned out really good.  Lots of left overs for me to take to work this week!    I will definitely be trying out these other recipes at home, though.  Thanks a bunch everyone!
