help!!! with 5 min pumpkin cake

OK ladies & gents...

I have tried the 5 min pumpkin microwave cake.  It comes out wet, and sort of drops back down after it is cooked.  I have tried to make another and just cook a little longer, but same thing!!

I did change one small thing, couldn't find gluten free pancake mix, used complete pancake mix; would this make a difference? 

I really wanted to make this for my family thanksgiving tomorrow. .  any help would be greatly appreciated!!

This won't help you, but I made the same recipe, but I DID use the multigrain pancake mix...had the same experience you described.  I even cooked it another minute...but it still was reeeeeally wet and flat.  I put a little Maple syrup on it and a squirt of SF whip cream...it was surprisingly edible.  I had the same experience with the apple cake as well...but again, I didn't waste it...just added those other goodies and it was fine...but it's not something I would probably have served to guests.  I'm not sure what the answer is...just wanted to let you know it's probably not something you've done or haven't done...I 'm pretty sure I  did the recipe exactly as printed...so go figure.   Happy Thanksgiving  B

Sorry it's too late to help you for Thanksgiving, but I do have the solution.  I don't use the pancake mix at all.  I use whole wheat pastry flour (whatever measurement it says) then I add 1 tsp baking powder and 1/4 tsp baking soda.  It comes out fluffy and wondeful.  If you don't have whole wheat pastry flour, but you have regular whole wheat flour, just put it in a food processor and grind it up to make it more fine.  Regular whole wheat flour tends to be too heavy.  I love the pastry flour!  Anyway, try this with all of your microwave cakes.  I also add a packet of Splenda to all of mine, they just weren't sweet enough for me because I don't like to put anything on them for topping.  The Splenda helps!
