Anyone have a SF Sweet Potato Pie Recipe?

Everyone has posted pumpkin pie recipes but I'm not a pumpkin fan. I prefer sweet potato instead. I know that the spices would be different for sweet potato. So let's see some sweet potato pie recipes , Please.

Sugar Free Sweet Potato Custard/Pie Filling II

In my Sugar free pumpkin custard, I used Equal sugar substitute but I find that Splenda works better. This recipe was modified from Splenda's website, www.splenda.com of pumpkin pie. I used sweet potatoes and omitted the vanilla extract. Easy dessert for two. I used a creme brulee dish to bake this delicious, guilt free dessert. Substitute with pumpkin if desired

Directions

    Stir Splenda and sugar into mashed sweet potato.
  2. 2
    Add evaporated milk/soymilk and vanilla extract.
  3. 3
    Beat egg in separated bowl and add to sweet potato/milk mixture.
  4. 4
    Pour mixture into creme brulee/custard dishes.
  5. 5
    Bake in 190C oven for 20 minutes,lower temperature to 170 and bake until wooden toothipick is clear when inserted.

    Adjust baking temperature and time.

Sweet Potato Pie
Categories: Diabetic, Vegetables
Yield: 8 servings

3 tb Margarine
1/4 ts Cinnamon
1/4 c Sugar
3 lg Sweet potatoes, cooked, mash
1/4 ts Salt
1 c Skim milk
1 Egg yolk
3 Egg whites, beaten stiff
3 tb Lemon juice
1 9-inch unbaked pie shell
1 ts Lemon peel

Use about 1 1/2 pounds sweet potatoes.

Heat oven to 350 F. Beat together margarine, sugar, and salt. Add
egg yolk, lemon juice, lemon peel and cinnamon. Stir in sweet
potatoes and milk. Mix well.

Fold in egg whites; pour into pie shell. Bake for 40 to 50 minutes or
until knife inserted in center comes out clean. To reduce saturated
fat, use a homemade pie shell made with vegetable oil.

1/8 wedge - 263 calories, 2 starch exchanges, 2 fat 6 grams protein,
13 grams fat, 32 grams carbohydrate, 3 grams fiber 296 mg sodium, 524
mg potassium, 34 mg cholesterol

Sugar-Free Sweet Potato Pie

So good, and so good for you!

2-1/2 cups mashed cooked sweet potatoes (1-1/2 pounds)
7-1/4 tsp. Equal Measure® or 24 packets Equal®
1/4 tsp. ground mace
2 tsp. vanilla extract
1 Tbs. margarine, softened
2 eggs
2 tsp. ground cinnamon
2 unbaked 9-inch pie shells
3/4 tsp. ground nutmeg
1/2 tsp. salt
1 12-ounce can evaporated milk or evaporated skim milk


Makes two 9-inch pies, 16 servings

Preheat oven to 350 degrees.

In large bowl of an electric mixer, combine the sweet
potatoes, eggs, Equal, margarine, cinnamon, nutmeg,
mace, salt and vanilla. Beat on medium speed until
smooth, scraping sides of bowl several times. Slowly
add milk. Beat until well-mixed. Pour into unbaked pie
shells and bake 50 to 60 minutes or until knife inserted
in center comes out clean. Allow to cool before serving.

Per serving: 208 calories, 9 g fat, 27 mg cholesterol,
245 mg sodium.

Diabetic exchanges: 1 Vegetable, 2 Breads, 2-1/2 Fat.

    Boil sweet potato whole in skin for 40 to 50 minutes, or until done. Run cold water over the sweet potato, and remove the skin.

    Break apart sweet potato in a bowl. Add margarine, and mix well with mixer. Stir in splenda, milk, eggs, nutmeg, cinnamon and vanilla. Beat on medium speed until mixture is smooth. Pour filling into an unbaked pie crust.

    Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes, or until knife inserted in center comes out clean. Pie will puff up like a souffle, and then will sink down as it cools.
