'This was actually amazing" - this is the response that I received from my mother last night after I cooked her dinner for her birthday.

Cajun Chicken "Pasta"

3/4 lb. spaghetti squash, cooked
2 tbsp butter
4 boneless, skinless chicken breasts
4 cloves garlic, minced
1 bunch of green onions
3 tbsp Cajun seasoning
1 tsp black pepper
2 tsp cayenne pepper
16 oz heavy cream
1 green pepper, diced
1 red pepper, diced
8oz mushrooms, sliced
2 cups parmesan cheese, shredded

Slice spaghetti squash in half. Bake rind side up about 30-40 minutes at 375. (Or you can microwave with a little water for 6 to 8 minutes.)

Melt butter in a large skillet over medium high heat. Add chicken, coo****il browned (about 6-8 minutes on each side.) Add garlic, onions, peppers, and mushrooms. Cover and cook for 5 minutes. Uncover and add heavy cream, coo****il hot but not boiling. Stir in parmesan cheese until sauce is thick and creamy. Serve over spaghetti squash.

It's kind of like a chicken alfredo - but with an awesome kick. The recipe originally called for pasta, but I substituted the spaghetti squash.

Looks absolutely yummy. Gonna save for a few months dwon the road when my pouch has started to stablelize from surgery!!

Oh! This looks so yummy. I think I might add to shopping list. Do they still have spagetti squash in the stores?

Yes spaghetti squash is still sold in the store. I find that the ones in the store lately have been HUGE and it goes bad before I can eat it all :-[
