Need stuffing recipe

This, to me, is the biggest challenge yet for thanksgiving. I was thinking of making quinoa stuffing, but can't seem to find any good recipes. I want to make a bread free stuffing. So that means no croutons, regular bread, cornbred, or anything else like it. I will make a generic stove top stuffing for those people in the house who want it, but I want to get creative with the stuffing I will eat. I say stuffing, but my stuffing won't actually be stuffed into the turkey. So can anyone please share your recipe?

Would also love a great sweet potato recipe too.

I'm going to make my regular stuffing except to use cooked Quinoa for my portion of the stuffing.
I'll mix in the sausage,onions,celery,apple,parsley and sage with the cooked Quinoa for me and bake it along side the turkey.

I made the sweet potatoes this way last year and got raves from the whole family.  Very easy, too!

Caramel Sweet Potatoes 

4 large sweet potatoes, peeled and cut into 2 to 3 inch chunks
Kosher salt
3 tablespoons butter
1/4 cup DaVinci Sugar Free Caramel Syrup

 

Cover sweet potato chunks with cold water in a medium pot, add a teaspoon of salt. Bring to a boil, cover, reduce heat and simmer until very tender; about 25 minutes.

Drain, add butter and DaVinci syrup, and whip with a hand held electric beater until smooth. Can be kept in a covered pot, or even chilled then reheated for serving.

If you want to make this a fancier dish, place potatoes into a casserole dish and top with pecan halves.  Pop into the oven and re-heat until the pecans are roasted.

This dish can be served to your entire family as the DaVinci sugar free syrup does not contain sugar alcohols.  No one will care that your sweetened buttery puree is sugar free.

Can you post the Stuffing Bread (Flax and Almond Meal) Recipe?  I love stuffing and would love a low carb alternative!

Quinoa is a whole grain and is harvested from a particular plant in Peru. It has much of the same nutritional value as beans, and it's really rich in protein. It cooks up like rice so can be used in any recipe that would usually call for rice. It's pronounced Keen-wa and can be found in any health food section of your local supermarket or whole foods store.

No problem!!

No it doesn't swell like rice. You cook it like rice, but once cooked it becomes as big as it'sgoing to get. gl
