Need Recipes For Easy Foods For B-Day Party
Hello everyone! I'm new to this part of OH. I GOOGLED for RNY friendly recipes and just couldn't find any and so have decided to turn to my OH family.
My mother and I have a birthday, December 4th and 5th, coming up and we have decided to have a party this year.
I will be 4 months postop on my birthday and wanted some easy party food recipes, such as appetizers. I'm looking for recipes that will also be appealing to the guests as well. I have tried a recipe that I know I can substitute for potato chips, the baked cheese "cracker" recipe and surprisingly enough my finicky older brother loved them. I was also looking for something like a healthy meatball recipe, perhaps lean turkey. I want a couple of different things for the guests to be able to choose from but at the same time I want to be able to enjoy a bite or two.

3 pounds of ground turkey...2 packs taco seasoning mix...2 cans of cream of mushroom soup...velvetta cheese ( can buy low fat)...Brown your ground turkey, add 2- 3 cups of water...Add packets of taco seasoning mix...Stir into blended together and water is cooked down...then add your 2 cans of mushroom soup...cube up some velvetta cheese and add to mixture...I dont like a lot of cheese in mine so I just put in whatever I want to suit my taste...Stir to blend...It can be put into a crock pot to keep warm...Can serve it with nacho chips, sour cream ( low fat )
Fruit ****tail Cheese Ball Take one can of fruit ****tail ( I use the no sugar added)...Drain the juice...Take a hand held potato masher ( or one of those hand held pastry dough cutters works that you use to cut the shortening and flour together for pie crust) and mash the fruit...Mix in one small box of sugar free vanilla pudding...Mix in 2 boxes of softenend cream cheese...I then chopped ( or crush, whichever you prefer)up some walnuts ( can use pecans) and spread them out on a sheet of aluminum foil...Form the mixture into a ball with your hands and lay it down on the walnuts, and then turn it over, press left over nuts laying onto your cheese ball... Optional...Sometimes I add a small can of drained mandarin oranges to the fruit ****tail for a fruitier taste...I did that the night of your birthday party...Or toss in some crushed pineapple. Pineapple Pecan Cheese Ball 2 packs of cream cheese 1/2 cup diced green peppers 1/2 cup diced onions 1 can of crushed pineapple ( drain juice) pinch of salt 2 packs of Buddig beef ( diced ) 1 cup of chopped pecans ( I used walnuts) Mix all the ingredients except for one of the packs of beef...Form into a ball, will be a little sloppy...Dice up another pack of Buddig beef...Lay it on a sheet of aluminum foil...Lay the cheeseball down on the beef, roll it over, patting the beef onto the ball...Best if made the day before...
For a bigger cheese ball, sometimes I add an extra pack of cream cheese ****************************************************************************************************** Beef Fajita Burgers from Rachael Ray's 30-Minute Get Real Meal cookbook (all low-carb)
Ingredients:
2 pounds of ground beef (or chicken or turkey)
2 Tbs Worcestershire sauce
2 Tbs Chili powder
1 1/2 tsp Ground Cumin
2-3 Tbs fresh thyme leaves
2 Tbs grill seasoning (I used McCormick's Mesquite Grill Seasoning)
Flour Tortillas
1 onion
1 pepper, any color
Cut the onion and pepper into strips, sautee, set aside
Heat a grill pan or large skillet over medium-high heat.
In a large bowl combine the meat, worcestershire sauce, spices, thyme, and grill seasoning. Score and divide the meat into 4 sections.
Halve those to make 8 patties.
Cook for 5-6 minutes or till desired doneness
Put peppers and onion on a tortilla, top with a burger (and a piece of cheese if you like) and enjoy!
Salsa is great with these :)

finger foods Deviled eggs Meat rollups. Vary the meats and cheeses, you can add a veggie in the middle like olives or pickles. Maybe a little mustard too. I like Ham & Swill with a dab of honey mustard and a SF sweet pickle. Salami with cream chese - fold it up lit a little taco You could also do a wrap using butter lettuce. You could fill the middle with a burrito filling, chicken, chicken salad, tuna salad, etc. "Little smokie" sausages in BBQ Sauce. I found a low carb BBQ sauce. Just dump everything in a crock Everything Roasted Nuts Recipe courtesy Rachael Ray 1 cup whole blanched almonds 1 cup hazelnuts 2 tablespoons butter 1 tablespoon hot sauce, eyeball it 1 tablespoon grill seasoning (recommended: Montreal Steak Seasoning by McCormick) 1 1/2 teaspoons ground cumin 2 cups smoked almonds (recommended: Diamond Smokehouse Almonds) 1 teaspoon poppy seeds 1 tablespoon sesame seeds Preheat oven to 400 degrees F. Place blanched almonds and hazelnuts on a cookie sheet and roast 7 to 8 minutes; your nose will know when they're done. Melt butter in small skillet with hot sauce, grill seasoning, and cumin. Remove from heat. Remove toasted nuts from oven and drizzle with butter and spices. Add smoked nuts and seeds to the cookie sheet and toss to combine. Transfer nuts to a serving dish. Serve warm. --------- Pepperoni Cups 4 oz. Cream cheese (softened) ½ cup mozzerella cheese (grated) ½ cup parmesan cheese (grated not powdered) ½ package frozen spinach, thawed and squeezed 2 tablespoons grated onion ¼ teaspoon garlic powder 1 package large pepperoni (approx. 24) Mix filling and put a teaspoonful on each pepperoni, shaping into a cup and placing into a mini-muffin pan. Bake for 20 minutes at 350 degrees. Makes 24 appetizers at less than 1 carb each. --------- Venetian Sausage Bites 6 sweet Italian sausages 2 tablespoons olive oil 1 cup balsamic vinegar 1. Fill a large, deep skillet 1/2 way with water. Bring the water to a steady simmer and add the sausages. Poach the sausages for 6 to 7 minutes, until firm. 2. Drain the sausages and slice into bite-size pieces (may be cooled overnight) 3. In a large skillet, heat 2 tablespoons olive oil. When hot, add the sausage and coo****il brown. 4. Drain off the fat and add the balsamic vinegar. 5. Simmer until vinegar is reduced and syrupy. 6. Serve immediately. -------- Mexi Roll Ups 1 package burrito size flour tortillas 1 - 8 ounce package cream cheese, softened 1 - 16 ounce container dairy sour cream 1 pound Mexican blend cheese 1 small can sliced black olives, drained 1 small can diced green chiles, drained 1 clove garlic, minced 2 cups salsa In a medium size bowl, beat cream cheese until smooth. Stir in sour cream and garlic. Add cheese, olives and chiles. Mix well. Lay out tortilla on counter and spread with cheese mixture. Roll up tortilla and wrap in foil. Repeat process until all are ready for freezer. Put in freezer for one hour. Remove from freezer, unwrap and slice. Serve with salsa if desired. Serves: 16 ------- Chicken n Cream Cheese Bites Cream cheese Boneless, skinless chicken meat Bacon strips cut in half crosswise 1. Preheat oven to 350° 2. Cut into serving sized pieces 3. Place cream cheese pieces on chicken, season and wrap with the chicken 4. Wrap chicken with half strip of bacon 5. When all pieces are rolled, place on a lined baking sheet; bake until fully cooked. ------ Smoked Salmon Dip 1 (6 ounce) can salmon 1 (6 ounce) package cream cheese, softened 1/4 cup milk 2 teaspoons lemon juice 3-5 drops liquid smoke, to taste 1/8 teaspoon pepper dill weed, to taste 1. Finely chop salmon. 2. Stir together with remaining ingredients 3. Serve with assorted crackers or fresh vegetables. -------- Ranch Cheese Ball * 12 servings (1 Cheese Ball) 5 min 5 min prep 1 package Hidden Valley Ranch Dressing Mix © 1 cup shredded colby cheese or cheddar cheese or co-jack cheese 2 (8 ounce) packages cream cheese Hormel real bacon bits 1. Mix Hidden Valley Ranch, cheese and cream cheese. 2. Shape in a ball and roll in REAL bacon pieces. 3. Chill and serve with crackers. *I love to mix this up and put a dollop on a slice of cucumber topped with a light sprinkle of parsley or chopped chives. Place these slices on a serving dish and you don't have people breaking off crackers in a cheese ball.
