I got this from this recipe forum bu have not tried it yet
BANANA NUT "BREAD"
2/3 of small banana
3 tbsp wheat flour
2 tbsp SF syrup (I used Toffee Torani)
2 tbsp Splenda
2 tbsp banana SF FF pudding mix
1/4 tsp banana extract
1 scoop protein (I used vanilla Unjury)
3 tbsp vanilla soy milk (or skim)
dash of salt
1.5 tbsp chopped walnuts (chop pretty fine, but not powdered)
Mix everything but the nuts in blender/bullet-- stir in nuts with a spoon. Pour into Pyrex measuring cup , small bowl or small loaf pan. Microwave on high for 5 minutes-- it will expand tremendously-- don't panic. When cool, cut into thin slices with sharp knife and store in Tupperware. Toast and eat each slice with spray butter-- nice nutty banana toasty flavor.
Each whole "bread:
440 cals 10.4 fat 44.2 carbs 30.3 protein 7.9 fiber
If you make 7 thin slices, per slice:
63 calories 1.5 fat 6 .3carbs 4.32 protein 1.12 fiber Keep in mind, it's really not bread, it's more of a dense cake-- and really tastes best if you let it cool completely, slice it into thin slices, and toast each slice and eat with spray butter.
