Mexican Crustless Quiche

I'm actually submitting my first recipe to this board.....LOL. Actually, I used to post TONS of crock pot recipes on both the Lapband (when I had the band) Board and the Preggo Board. But I thought you might all enjoy this recipe. Notice I don't call for salt or pepper. The cheese is salty enough for this dish but if you try it and feel you want more seasoning, feel free to season according to your family tastes the next time you make it. This feeds my family of 9. On the rare occassion I have leftovers...it reheats nicely.
12 oz salsa - DRAIN if very wet or runny!!!! If really thick and NO****ery....it will be ok
12 eggs
1 cup sour cream
2 4oz cans diced green chilis, drained
3 cups shredded pepper jack cheese
Preheat oven to 350. Spray a 13x9 pan with nonstick spray and spread salsa over the bottom of pan.
In a BLENDER, mix eggs and sour cream until smooth and creamy.
Pour into prepared pan and gently fold in green chilis and shredded cheese.
Bake 30-40 minutes until set and lightly brown on top.
Add ins.....
diced cooked ham
shredded cooked chicken
cooked ground beef
shredded leftover beef roast
cooked sausage
cooked churizo
shredded leftover pork roast
Italian Version.
Still use the eggs blended with the sour cream....BUT.....
substitute spaghetti sauce for the salsa
use 2 cups of shredded mozzerella cheese and 1/2 cup shredded parmesean
substitute 2 4oz cans of canned mushrooms for the green chilis
and either cooked sausage or diced pepperoni is really good in this too.

I made this last week and it was delicious!!! I added churizo to mine. I ate it for breakfast all week, of course I had to hide it from the family so I could have the left overs! lol
