PINEAPPLE UPSIDE DOWN CAKE

ok....this is my version of what I make when i really want pineapple upside down cake. Note....it isn't exactly WLS friendly......but it is a LITTLE bit healthier....I think. LOL.
8oz can crushed pineapple...drained....juice reserved
1 cup Splenda Brown Suger Blend
1 stick of REAL butter.
1 tube of canned (10 count) biscuits
Melt butter and divide between 10 muffin cups.
Mix brown suger and crushed pineapple together and divide between the muffin cups.
Top with one biscuit.
Drizzle 1 tsp of pineapple juice over the top of each biscuit.
Bake at 350 for about 11 - 13 minutes or until tops of buscuits are golden.
Cool for about 5 minutes and then invert onto a cookie sheet.
Makes 10 servings.
Can also add a marachino cherry half to each muffin cup if you like them...I personally don't.

Have you tried the new Pillsbury Reduced Sugar cake mixes yet? In my area I can only get the yellow or chocolate type but use them for many recipe variations. What I'd do for your 'fix' is this:
1 box of the yellow reduced sugar cake mix
1 carton silken tofu, drained
1 can pineapple rings, no sugar added
1/2 cup pineapple juice (from the canned fruit, unsweetened type)
Splenda brown sugar mix
In a 9 x 13 pan spray some nonstick baking spray, sprinkle about 2 tab. of the Splenda brown sugar, arrange the pineapple slices on top of that. In an electric mixer bowl or a food processor, combine the dry cake mix, drained tofu and pineapple juice. Beat approx. 5 minutes, or until fluffy and no white lumps remain from the tofu. Pour batter on top of pineapple slices and smooth out, this will not 'melt' the same way a traditional cake mix batter does.
Bake in a preheated 350 degree oven about 25-30 minutes or until a toothpick inserted comes out clean. Invert onto a serving platter while warm.
Of course, for extra calories you could also do the traditional maraschino cherry in the middle of the pineapple slices but I doubt it really needs it.
You can take this basic cake mix/tofu/liquid recipe and do all kinds of variations with it. Makes up into great muffins/cupcakes. People I work with even love it...non-dieter types.
