Ok... first of all I made this recipe up, but it was sooo good, I thought I would share

1 bag of boneless, skinnless chicken breast ( I use wal-mart great value)
1 can of diced green chili
1/4 cup cumino
salt/pepper to taste
2 cans of pinto beans w/jalepenos ( I used ranch style brand)
1 can of Old El Paso Mild Enchilada sauce
1 bag of kraft 2% milk monterey jack/cheddar cheese

First of all this is a crockpot recipe first

Put chicken in crockpot - add seasoning to the top of the chicken.. then pour over the chicken the diced green chili's and the pinto beans - Let cook all day about 7 hours. Then take two forks and pull the chicken apart (shred it).. Mix well with all the other ingrediets... strain excess juice out

Now get a 8x11 cake pan and pour the mixture into it - pour the can of El Paso Enchilada sauce over the top and sprinkle the bag of cheese and bake for about 30 minutes at 350... Cut into 8 servings
